Recipe needs 4 tbsp. Oil. Need Good Non stick Pan . So it won’t Consume More Oil. Stuffed Okra ( Bhindi) is a Simple recipe you can prepare with every day ingredients from your pantry . I tried 4 stuffing ( with roasted Channa dal mixed with Spices and Chickpea flour mixed with spices and Peanuts with spices or Mixed Nuts stuffing ) . You can use any stuffing of your choice . All tasted good. You can stuff Okra ahead of time and refrigerate . Pan fry before you serve. It takes less time to Pan fry them. I used a wide pan to cook 25 Okra at a time. Season with Salt once you switch off the stove. So Okra won’t be Slimy. Here is the Simple and tasty recipe with few Ingredients.
Preparation time : 15 minutes and Cooking Time : 15 Minutes.
1. Okra – 20 to 25
2. Roasted Channa Dal – 1/2 Cup or Chickpea flour and rice flour – 1/2 cup
or PEANUT SESAME SEEDS stuffing ( Dry roast Peanuts 1/2 cup with 2 tbsp Sesame seeds , 1 tbsp Coriander seeds , 1 tbsp Cumin seeds, few fenugreek seeds amd mustard seeds. Cool and grind with 2 tbsp dry coconut , 4 cloves of garlic and Tamarind or Mango powder)
or MIXED NUTS STUFFING – Dry roast 2 handfuls of Mixed Nuts with 2 tbsp Sesame seeds , Coriander and Cumin seeds – 1/2 tbsp each , few mustard and fenugreek seeds. Cool and grind with 1/4 th cup Coconut, Garlic cloves – 4 and Tamarind or Mango powder and GARAM MASALA powder
3. Cumin and Coriander seeds – 1 tbsp. each
4. Fenugreek seeds and Mustard seeds – 1/4 th tbsp. each
5.Tamarind – Marble Size or Mango powder .
7. Turmeric- 1/4 th Tbsp
8. Red Chilli Powder – 1 tbsp.
9. Oil – 4 tbsp.
10. Finely Chopped Coriander Leaves.
1.Dry roast Cumin seeds, Coriander seeds, Mustard seeds, and Fenugreek seeds. Cool them and Grind with Roasted Channa Dal or Chickpea flour , Tamarind or Mango Powder , Salt , Turmeric and Red chilli Powder.
2. Mix this Powder with 2 tbsp. Oil.
3. Stuff this Powder into Okra.
4. Heat 2 tbsp. Oil in a Non stick Pan and Place the Stuffed Okra in a Single Layer. . Cook for 7 Minutes with Lid closed. Check in between to avoid burning.
5. Flip them slowly and Cook the other side for 7 Minutes with lid open . Drizzle 2 more tbsp. Oil . Cook till Okra is Light Brown. Season with Salt . Garnish with finely chopped Coriander Leaves.
Cool the Vegetable and Squeeze Juice of Half Lime for extra flavor and Optional.
