Last week I prepared these Vegetable pockets along with my Kids as they want to help in the Kitchen and prepare their own Lunch. . It was fun and interesting for them to grab vegetables from fridge, using Measuring cups and spoons and I too enjoyed teaching them how to prepare their own Lunch . Cooking together helps kids to explore about foods and let them make their own choices. it is a great way to involve and teach kids some basic Cooking. They will feel proud to eat their own cooked food. It is a simple recipe ; all you have to do is prepare a Dough with Wheat flour, milk, Oil, salt and water. Gather your Vegetables, Boil the Potatoes and prepare tasty filling with Spices. I hid a secret Sauce in the Veggie Pockets ( You can prepare this Sauce at home or use Store Bought) which made them even tastier.
To go along with Vegetable Pockets I prepared a Simple Dessert with Yogurt and Apples. To make Yogurt tastier I added grated apples , nut Powder and so on . I shared the recipe . Kids are going to love this fancy fruit yogurt dessert and surprisingly it will be a decadent dessert for everyone in the family and for those who don’t like to eat Plain Yogurt. Sprinkle some Cinnamon sugar and it will taste like something special in this yogurt dessert.
KIDS LUNCH BOX IDEA or SERVE as Weekend Lunch for Kids.
Recipe for 4 to 5 Big Vegetable Pockets.
Preparation and Cooking Time : 30 Minutes.
Grind 10 Almonds with Sugar and Cardamom (2) .Transfer to a Bowl .
Peel the Skin of the Apple and grate apple . Mix Half Cup Hung Curd , Almond mixture and grated Apples .
Check for Sweetness and add accordingly.
RECIPE FOR VEGETABLE POCKETS;
POTATO CURRY :
1.Pressure Cook or in the Microwave 3 Big Potato’s . Peel the Skin , Cool and Crumble the Potato’s .
2.. Heat 1 tbsp. Oil and fry Onions with little Salt , Cumin Seeds, Turmeric and Crushed Garlic .
3. Once Onions are Brown add 1 Cup finely Chopped Vegetables ( Carrots, Green Beans, Corn and Green Peas) .
4 Once the Vegetables are Cooked add Crumbled Potato , Half tbsp. Rasam Powder or Sambar Powder and Finely Chopped Coriander leaves . Cool the Filling .
Boil Tomato’s in Hot Water for 3 Minutes . Cool them . Peel the Skin and Crush with your Fingers. Heat 1 tbsp. Oil and fry Onions or Finely chopped Shallots with little Salt, Crushed Garlic and Finely Chopped Capsicum( Half Cup) .
Once Onions are Brown and Capsicum is soft add Crushed Tomato’s , Black Pepper , Little Sugar and 1 tbsp. Italian Seasoning. Cook until it becomes little thick. Cool the Salsa.
Mix One Cup WHEAT FLOUR with little Salt , Oil , Half Cup Milk and enough Water. Knead the dough for 4 to 5 Minutes . Grease the dough with little Oil and rest for some time.
PROCEDURE for VEGETABLE POCKETS :
1. Knead the dough and divide into 6 equal parts.
2. Take One ball of the dough and dust it with flour. Roll the dough keeping it 1/4 th thick .
