Recipe for 4 Uttapam’s .

Preparation time : 15 minutes    Cooking time : 15 Minutes.

Quinoa originated from the Incas in South America around 5000 years ago .It became so popular because of its Health benefits( packs in a powerful amount of Protein 14 – 18 percent for a plant food , good source of dietary fiber , Phosphorous, magnesium and Iron . Very low in Cholesterol and sodium ) and The United Nations General Assembly declared 2013 the ” International Year of Quinoa” . Often confused as a true grain – it is actually a Pseudo grain – the seed belongs to a family of Beets, Spinach and Swiss Chard . Today I’m sharing Quinoa Uttapam prepared with Quinoa and Lentils . It taste like Pizza minus Cheese. I already shared Quinoa Brown Basmati Rice Idli which is fermented . You can ferment or Prepare uttapam directly after grinding .   Soaking and Fermentation  helps in Protein digestion and Good source of Probiotics .Taste will be Crispy outside and soft, fluffy  inside . You don’t need to serve with any Chutney as it has Vegetables toppings and seasoned with Italian seasoning. Better to buy an Organic Quinoa and no need to worry about the Coating ( called Saponin which is bitter in taste and protects from birds being eaten).Source : Health Magazines
