1.INSTANT POT STUFFED MASALA EGGPLANT ( BAIGAN) – 5 INGREDIENTS . Cooked in less time when compared to stove top . Prepare the Masala i.e stuffing in your free time and stays good if you store in an air tight container .

2. Instant pot INDIAN CLUSTER BEANS with Special tadka . Tadka ( Seasoning ) will enhance the taste of the vegetable and you feel like eating more vegetable . Serve with Phulka( Indian Bread) or with Steamed rice. I added very little water to build pressure. Once finish cooking there was no water left and the rest of cooking I finished in the same pot .

3. INSTANT POT TINDORA STIR FRY WITH RAW MANGO . TINDORA is a very tasty vegetable you feel like eating it as a snack . I added Raw mango spice powder at the end as mangoes are in season. Serve with roti or steamed rice.

4. INSTANT POT GONGURA CHANNA DAL STIR FRY. If you like Gongura you are going to like this tasty stir fry with Channa dal and spices. Curry powder and other ingredients will supress the tanginess of gongura. Stays good for more than 4 days. Serve with steamed rice. GOOD SOURCE OF IRON . Eat in moderation.
