INSTANT POT TAMARIND RICE – WEEKEND LUNCH /KIDS LUNCH BOX WITH URAD DAL PAKORA( AIR FRYER)

Instant pot Tamarind rice – Kids Lunch Box with Urad dal Pakora

Sometimes I pack tamarind rice for Kids Lunch Box with tamarind paste I  prepare before hand or with  tamarind powder. Over the weekend I tried in Instant pot and it turned out good. Sharing the amount of water , rice and other ingredients to add to enjoy a tasty and fluffy rice with no water left . Along with tamarind rice I packed Urad dal pakora ( Air fryer) . These are easy to prepare pakora’s and are Instant. Do try this combination for Weekend Lunch or Early Dinner. Your family is going to like this combination. Here is the Simple recipe with every day ingredients from your pantry .

RECIPE FOR 3 to 4

INGREDIENTS FOR INSTANT POT TAMARIND RICE :

1. Basmati Rice – 1 cup ( soak for 30 minutes)

2. Water – One  3/4 th cup

3. Tamarind paste – 1/4 th cup or Tamarind powder ( puligore powder)  – 3 to 4 tbsp

4. Curry leaves – 15 ( finely chopped ) , Salt and Turmeric- 1/4 th tbsp 

5. Seasoning – Urad dal – 2 tbsp , Cumin and Mustard seeds – 1/2 tbsp each , Red chillies – 3 , Green chillies – 4 and handful of roasted Peanuts and cashews

6. Oi – 4 tbsp

METHOD :

1. Turn Instant pot on Saute mode . When warm add Oil followed by Urad dal , cumin and mustard seeds , Red chillies , Green chillies , Turmeric and Curry leaves  . Mix well .

2. Add Peanuts and Cashews . 

3 . Add washed and soaked rice , water and salt . Taste water for salt and add accordingly . NOTE : If you want to add tamarind powder ( Puligore powder ) add once you finish cooking rice . 

4. Cancel saute . Rice mode . NPR . Take out the inner pot. Fluff the rice. Add tamarind powder or Tamarind paste . Taste and add accordingly .

5. SERVE with plain curd .

RECIPE for URAD DAL PAKORA :

INGREDIENTS and METHOD  FOR URAD DAL PAKORA ( PAN FRIED or PANIYARAM PAN and  AIR FRYER ) . 

1. Soak Urad dal ( One cup) for an hour . Grind without water . Transfer to a bowl .

2.To this add 1/4 th cup APF flour , 3 tbsp Curd( Yogurt ) , finely chopped onions, chopped green chillies , ginger and finely chopped coriander.

3. Cook in Paniyaram pan  or Pan fry.

4. Transfer to Air fryer Basket. Bake for 3 minutes at 370 degrees . 5. Serve warm or at room temperature . No need of any dip . They taste good on their own . 

ADIRASAM ( SHORT CUT METHOD) – AIR FRYER AND INSTANT POT – 5 INGREDIENTS

DESSERT with COCONUT – AIR FRYER 

Do you like traditional desserts which are not deep fried. I tried this traditional recipe in Air fryer and turned out good. First we need to cook the dough on stove top or Instant pot . You can refrigerate the dough and bake in Air fryer before you serve. Knead the dough once cooled by adding Ghee or Oil or Combination of Ghee and Oil . Just bake the time I mentioned otherwise they will be hard. If you refrigerate the dough ,bring the dough to room temperature or  bake for couple more minutes. They have to be 2 inch thick . We like the taste of Jaggery. You can add sweetner of your choice or combination of Jaggery and sugar.  Here is the simple recipe with every day ingredients from your pantry .

Recipe for  12 to 15 . One cup – Measuring cup 

INGREDIENTS :

1. Rice flour – 1 cup( store bought)  , Wheat flour – 1 cup

2. Dry coconut -1/2 cup

3. Ghee – 5 tbsp or Oil – 5 tbsp 

4. Water – One measuring cup 

5. Jaggery – 1 measuring cup or combination of Jaggery and sugar 

6. Cardamom powder

METHOD INSTANT POT : 

1. Add water , powdered jaggery , cardamom  and 5 tbsp ghee to inner pot. Close lid Manual 2 minutes . QPR ( after 10 minutes) .

2. Take out inner pot . ( In a bowl mix rice flour , wheat flour and coconut . Mix well)

3. To the melted jaggery water add the flour and mix slowly . It may seem that water is not sufficient . Mix with hands once cooled down.

4. Grease your hands with little oil or ghee and take a big lemon size dough and shape them like cookie. Spray Oil .

5. Bake 5 at a time . 370 degrees for 4 minutes . Take out the basket . Flip them and spray some oil . Bake for another 5 minutes.

SERVE warm .

METHOD STOVE TOP :

1. Add water to sauce pan. When it comes to boil add powdered jaggery, cardamom and ghee.

2. Once Jaggery is melted take out the sauce pan and add rice flour , wheat flour and dry coconut. Mix gently . 

3.  Once cooled , Grease your hands with little oil or ghee and take a big lemon size dough and shape them like cookie. Spray oil . 

4. Bake 5 at a time . 370 degrees for 4 minutes . Take out the basket . Flip them and spray some oil . Bake for another 5 minutes.

SERVE warm .

 

PAKORA FOR KADHI , KIDS LUNCH BOX WITH APPLE KHEER, TEA TIME SNACK – AIR FRYER – 5 INGREDIENTS

Pakora for Kadhi , Kids Lunch Box with Apple Kheer , Tea time snack – Air fryer

Do you like Pakora and doesn’t like shallow frying or deep frying , then do try this Air fried Pakora’s . You don’t find any difference . They look and taste like deep fried One’s. Easy to prepare as there is no soaking and grinding. You can prepare  in your free time and refrigerate and bake for few minutes before you serve. I baked directly in the basket without foil and they didn’t stick . I even packed for Kids Lunch Box with Apple Kheer . They are soft and tasty at room temperature. Recipe for 20 Pakora. For Kadhi or Kids Lunch Box or Tea time snack 

INGREDIENTS : Cup – Measuring cup 

1. Vegetables : Onion – One big ( thinly sliced) , Green chillies – 3 , Ginger – small piece ( chopped ) , Finely chopped coriander 

2. Chick pea flour – 1/2 cup , Rice flour – 1/2 cup

3. Water – 1/2 cup

4. Spices – Red chilli powder or sambar powder – 1/2 tbsp , Crushed coriander and Garam masala -1/4 th tbsp 

5. Oil – 2 tbsp to add in batter and 2 tbsp to spray on pakora 

METHOD:

1. In a bowl mix thinly sliced onions , green chillies, chopped ginger , chopped coriander , sambar powder or red chilli powder , crushed coriander seeds , salt , chickpea flour , rice flour and 2 tbsp oil . Mix well .

2. Now slowly add water . Don’t add more than half cup water. 

3. Grease the Air fryer basket with oil .

4. Grease your hand with oil  or wet your fingers . Divide the batter into 20 . Place 10 in the greased basket. Spray some oil on each pakora.

5. Bake at 370 degrees for 6 minutes . Spray oil and bake for another 5 minutes.

Serve warm or at room temperature . Add to Khadi or Pack for Kids Lunch Box with Apple Kheer or for Tea time snack .
