PEANUT BUTTER BALLS – 5 INGREDIENTS /AFTER SCHOOL SNACK

Peanut Butter Balls – 5 Ingredients /After school snack 

If you have jar of Peanut Butter and want to prepare Quick Dessert for After School Snack or for Lunch Box Dessert try this recipe prepared with 5 Ingredients.  The ingredients I added will supress the Peanut Butter flavor and Kids who doesn’t like Peanut Butter will not notice . Doesn’t need much Cooking except little roasting and grinding. Mix everything and enjoy a tasty Dessert. Just add a little Jaggery or Brown sugar or Coconut sugar if needed. Just add a pinch of Cardamom powder for unique sweet aroma and flavor it adds to Desserts. Pods should be ground well . You can take the help of a rolling pin. Cardamom is great for liver cleaning and used as a breath freshner . When buying cardamom buy green one as they are  the most aromatic . The seed is considered as an excellent source of limonene  a chemical typically found in the skin of citrus fruits . Limonene is an antioxidant and used to prevent and treat Cancer. Source : HM 

Recipe for 10 Medium  Peanut Butter Balls

Preparation time – 20 minutes

INGREDIENTS : One cup = One measuring cup

1. Peanut Butter – 1 cup ( Chunky Peanut Butter) 

2. Oats – 1/2 cup ( Roast and grind into fine powder )

3. Dry Coconut – 1/2 cup and 1/4 th cup ( Grind into fine powder for dusting at the end) 

4. Jaggery or Brown sugar – 4 tbsp

5. Ghee – 1/4 th tbsp ( Optional)

6. Cardamom powder – 5

METHOD:

1. Dry roast Oats . Cool and Grind with Cardamom . Transfer to a Bowl .

2. To this add Dry coconut, Jaggery ( Brown sugar) , Ghee , Peanut Butter and Chocolate Powder.

3. Mix well. Divide into 10 equal portions.

4. Shape them like balls . Roll in Powdered Dry coconut.

5. Store in a Glass Bowl . Note : If you like a little bite in between add some roasted Peanuts.

BAKED WHOLE WHEAT PISTACHIO EMPANADAS – KIDS LUNCH BOX DESSERT/AFTER SCHOOL SNACK

BAKED WHOLE WHEAT PISTACHIO EMPANADAS – Kids Lunch Box Dessert / After School snack .

Over the  weekend  I baked this dessert to pack for Kids Lunch Box as Dessert and for After school snack. . I just tried out as a sample and they turned out delicious. Need two main ingredients which are outer covering and filling. It takes 20 minutes to prepare ( outer covering , grinding the filling and rolling , stuffing empanadas) and Baking 10 + 10 minutes. After 10 minutes flip and brush with some Oil and bake for 10 more minutes. They are delicious with tasty filing and Crispy outer covering.  . But I left them in the Oven for 10 more minutes after switching  it off   for extra crispiness. Filling is with Pistachio’s and few more easy available  ingredients. While the dough is resting you can prepare the filling. Easy and tasty filling if you have  store bought roasted Pistachio’s. Here is the Simple recipe with few ingredients. 

No need of Baking soda . Just follow my recipe to enjoy a tasty Dessert .

Recipe for 7 . Preparation time : 20 minutes and Baking time : 10 + 10 minutes. Extra 10 minutes after switching off the Oven . 

PACK FOR KIDS LUNCH BOX AS A DESSERT : 

INGREDIENTS:OUTER COVERING :

1. Mix 1 measuring cup Whole wheat flour with little salt and 4  to 6 tbsp Oil . Using fingers mix oil with flour.

2. Need 1/2 cup ( Measuring cup) water . Add water slowly and mix until the dough comes together . Keep aside for 20 minutes.

3. Meanwhile prepare the filling.

FILLING :   Store bought roasted NUTS. 

1. Grind 1/2 cup  Pistachio’s with 1/4 th cup Cashews , 1/4 th cup walnuts , 1/4 th cup dry coconut, 1/2 cup raisins , 6 Cardamom and 1/4 cup Jaggery ( Brown sugar) or Dates  . Transfer to a Bowl . Taste for sweetness and add accordingly .

2.Add 2 tbsp  melted ghee  to the filling and bind Lemon size Balls. Divide the  wheat dough into 7 equal parts. 

3. Roll the dough into half inch thick circles. Place the filling ball and crumble with your fingers. Fold  half of the  circle over to form half moon. Press the edges together with fingers. Use the fork to form ridges. Repeat the process with the rest of the dough and filling.

4. Preheat the oven . Brush the empanadas with Oil . Bake for 360 degrees F for 10 minutes . After 10 minutes flip and bake for 10 more minutes or until light brown .

5. After finish baking I left in the oven for 10 minutes for extra crispiness.

They are tasty and crispy when served warm .

 

 

DIWALI DESSERTS – SWEET POTATO COCONUT ROLLS ,COCONUT PISTACHIO LADOO , ADIRASAM AND SPINACH VADA

 

DIWALI DESSERTS – Sweet potato coconut rolls, Coconut Pistachio rolls, Adirasam ( Short cut method)  and Spinach vada. Easy Dessert recipes prepared with 5 ingredients . All ingredients you can find easily in your pantry .Preparation and cooking time – Less than 30 minutes 

Last week I shared Coconut Pistachio Ladoo . I thought I would try with different flavors ( like Apple, Pear, Carrot or Beetroot ) as I have sweet potatoes in my household( I buy big bag for everyday cooking) . I realized that I didn’t try any dessert with sweet potato, so I gave it a try . The rolls turned out tasty . You don’t need to spend much time to Cook as it took less than 20 minutes to prepare. I made this with 8 Ingredients that you will have in your pantry . Try for Diwali and you can pack for Kids Lunch Box and after school snack. Here is the recipe . 

Some of the Diwali recipes that I prepared .  Sweet potato Coconut Rolls , Coconut pistachio Ladoo , Adirasam ( Short cut method) No need of Soaking and Grinding rice. They almost taste the same . Recipe for 20 Adirasam . No need to rest the dough . Shallow fried in Minimum Oil . SPINACH VADA .

SWEET POTATO COCONUT ROLLS :

RECIPE for 20 Medium rolls .

Preparation time and Cooking time :   20 minutes

INGREDIENTS: 

One cup = Measuring Cup 

1. Sweet Potato – 2 ( Cooked and Mashed ) ( Wrap Sweet potato in wet paper towel and cook in Microwave for 3 minutes ( 1 +1+1 ) stop microwave for every one minute. 

2. Dry coconut – 1 1/2 cup

3. Jaggery – 3/4 th cup or accordingly

4. Milk – 2 cups 

5. Ghee – 1 tbsp

6. Sooji ( Semolina) – 3 tbsp or Fine Wheat rava or Roasted Upma mix or Wheat ladoo flour .

7. Cardamom – 6 ( Powdered )

8. Chopped Mixed nuts – 1/2 cup

METHOD :

1.Dry roast Sooji in 1/4 th tbsp Ghee and transfer to a Bowl .

2. In a wide pan add Dry coconut ,  Cooked and mashed Sweet potato , Milk and Powdered Jaggery . Mix and cook on a Medium high flame for 5 minutes. Stir in between to avoid the burning.

3. After 5 to 7 minutes  add roasted Sooji ( Semolina) and ghee . Cook until it thickens ( say 5 minutes) .

4. Add chopped nuts and Cardamom . Mix well and Switch off the stove.

5.Cool before you make rolls. 

COCONUT PISTACHIO LADOO . Chewy and tasty . 5  Ingredients with very less Cooking time . Preparation time : 5 minutes .

Coconut Pistachio Ladoo – 10 minute Dessert ( Cooking time) Diwali Dessert/ Kids Lunch Box Dessert/After school Snack 

You can add Carrot, Grated Apple, Pear, Beetroot or Sweet Potato . I’m going to try all these combinations with Coconut and will Update . I can say it is one of the easiest and tastiest Dessert recipe. It takes only 10 minute Cooking time and 5 Ingredients recipe. Preparation is just transferring things into the pan all at a time except couple of ingredients you need to add at the end .Stirring in between and not continuously . I remember eating this Dessert during festival time when we have lot of Coconuts after offering to the god. I remember me and my sisters helping my mother in grating coconut and stirring till it thickens. Good old days. Now I do this alone after Kids goes to school . There is no Holiday for festivals . But they do help and  enjoy in decorating . Love the smell of house with Agarbathi and festival food. I didn’t prepare this for long time as  I don’t buy fresh coconut because it is difficult to break and didn’t like the frozen one. I prepared just a sample before ( 10 ladoo’s) Diwali with dry coconut . They turned out good . I’m going to make a big batch to share with friends  . Here is the simple recipe with 5 ingredients. 

You all might have tasted Coconut Burfi , Do try this delicious and tasty Coconut Pistachio Ladoo. It is little chewy and tasty . 

Recipe for 10 medium Ladoo’s.

Preparation time – 5 minutes Cooking time – 10 Minutes

INGREDIENTS : 

1 cup – One measuring cup

1. Dry coconut flakes – 1 1/2 Cup

2. Jaggery – 1 cup or accordingly  or Sweetner of your choice. or Brown sugar

3. Milk – 2 cups

4. Ghee – 1 tbsp

5. Pistachio’s crushed – 1/2 cup

6. Cardamom – 6 Powdered 

METHOD : 

1. Transfer Dry coconut , Powdered Jaggery and Milk into a pan . Mix well . Cook on a Medium high flame . Stir in between to avoid burning. Cook until it becomes thick  ( takes less than 10 minutes .)

2 . Switch off the stove and add Crushed Pistachio’s , Ghee and Powdered Cardamom .

3. Mix gently . Taste little and add Jaggery accordingly if needed .

4. Cool and mix in between .

5. Once cooled take a handful and shape Ladoo’s. Enjoy .

DESSERT WITH APPLES – AFTER SCHOOL SNACK

Dessert with Apples or APPLE DESSERT with Crispy Crust  –  HEALTHY After school Snack /Kids Lunch Box Dessert

I pack apple for Lunch Box as a Dessert . Sometimes my Kids eat as After School snack . I have leftover Bread packet which is expiring in 2 days and Bag of Apples . I prepare Sooji Halwa for Weekend Lunch and for festivals and to satisfy Sweet Cravings. This time I  tried a new recipe with Apples and ALMONDS and wrapped in Bread for extra Crispiness.  or Pour in a greased Pan . Cool and cut into Pieces .You can prepare  Apple Almond  Halwa in your free time and Wrap in Bread and refrigerate. Just Pan fry before you Serve. Kids are going to like this new Crispy stuffed bread with Apple Almond Halwa. Here is a Simple recipe with everyday Ingredients. Just follow my recipe to enjoy a tasty Apple Halwa .

Recipe for 15 . Preparation and Cooking time – Less than 30 minutes .

INGREDIENTS : 

1. Sooji ( Semolina ) or Fine wheat rava( Cracked wheat) or Roasted wheat rava upma – 1/2 cup

2. Whole wheat Vermicelli – 1/2 cup 

3. Apples – 2 ( Grated)

4. Milk – 2 cups

5. Jaggery – 1/2 to 3/4 th cup or accordingly or Combination of Jaggery and sugar.- 3/4 th cup

6. Ghee – 2 tbsp

7. Crushed Almonds – 1/2 cup

8. Raisins – Big handful

9. Powdered cardamom – 6 

10 .Bread Slices – Whole wheat or whole grain

METHOD :

1. Dry roast Vermicelli and Sooji or Wheat rava( cracked wheat ) in 1/2 tbsp Ghee and transfer to a Bowl .

2. Heat 1/2 tbsp Ghee and roast Grated Apples.  Transfer to Sooji Bowl .Add Milk  to the sauce pan and Bring to boil.

3. Once milk comes to Boil add Roasted vermicelli ,Sooji, , Crushed almonds  and Apple mixture slowly and mix without lumps.

4. Once cooked switch off the stove and add Jaggery , sugar , Raisins ,Cardamom powder and Ghee . Mix well . Taste for sweetness and add accordingly .

5.Cool the Apple Almond Halwa  and divide into 15 equal portions and shape them like Balls.

NOTE : You can grease a pan with little Ghee and Pour the Apple Almond Halwa  . Set with the help of Spoon . Cool and cut into Pieces . 

NOTE : If you want a Crispy crust , then Stuff in the Bread and Pan fry .

6. Remove the crust of the Bread . Sprinkle water on Bread slice and press between your hands.

7. Place the apple almond halwa ball in the middle of the ball and seal the edges . Flatten them .

8. Heat Pan with little Ghee and Pan fry the stuffed bread . Sprinkle sugar on top of each stuffed Bread. Pan fry until golden brown . SERVE WARM .

 

7 AFTER SCHOOL VEGETARIAN SNACKS

 7 AFTER SCHOOL  VEGETARIAN SNACKS . Simple recipes prepared with few Ingredients and keep them full till Dinner time if they  go for After school activities .

1. BOILED PEANUT SALAD with HOMEMADE APPLE DRESSING. It is light and refreshing Salad and easy to prepare if you have Boiled peanuts ready .
