Kids Lunch Box Dessert /After school snack – Mixed Nuts Ladoo and Baked Chickpea Crackers

During the weekend I baked Pineapple Cake with Kids. My Kids love Baking and we finished  the cake in two days ( It is 8 servings) . I don’t have any dessert and Snack to pack for Lunch Box, so after kids left school I decided to prepare Ladoo’s before my Breakfast. It is an easy recipe which doesn’t need any cooking. Took the help of store bought nuts. I already posted the recipe couple of months ago. Sometimes I even forget the measurements. I checked the recipe in my blog because I want the same exact taste. Gathered all the ingredients. I always listen to music when cooking and it gives a comfortable aura in the kitchen. So in no time I finished grinding and Binding Ladoo’s . They melt in the mouth and are tasty. They also stay good for couple of weeks ( I don’t think any will be left) . After Breakfast I decided to Bake crackers. A few days ago, I tried Chickpea Crackers and was hit with my Kids. They turned out crispy with  less baking time ( 10 + 5 minutes) and 5 Ingredients . Sharing both recipes. 

Raisins are good source of carbohydrates for energy .Fiber in raisins protect against colon cancer , lowers cholesterol , helps protects against cardio vascular disease . Eat raisins in moderation to avoid excess calories. When grapes are dehydrated to produce raisins the nutrients been more concentrated . Deep red color raisins contain no additives or preservatives . Golden raisins which are oven dried are treated with the preservative sulphurdioxide  which is safe for most  people but could cause an allergy type reaction in some asthamatic individuals . These are used to preserve Vitamin A and C in golden raisins   during the drying process. Raisins contain fructans a prebiotic which promote health in colon . These fructans help the body better absorb calcium and magnesium . Certain compounds in Raisins could fight oral bacteria that results in cavities and gum disease . RECIPE FOR LADOO: Just follow my recipe to enjoy a tasty and melt in mouth Ladoo’s and Kids will never say no for these Ladoo’s. Keeps them full till Dinner time if they go for after school activities. Recipe for 20 . Time to prepare – 30 minutes. Doesn’t need any Cooking. 


BAKED CHICKPEA CRACKERS. Recipe for 70 Crackers with very less Baking time. Taste better than store bought and without Preservatives.



Kids Lunch Box with LEFT OVER RICE or FRESH COOKED RICE . It taste good at room temperature. Pack with Plain curd. 5 Ingredients recipe . Easy to prepare Lunch Box in the morning if you have Cooked rice with 10 minutes Cooking time . Kids are going to like this tangy rice .

2. APPLE CINNAMON MUFFINS. We added 4 apples and the muffins are moist with Crispy crust. Spray the cupcake liners with cooking spray so the muffins will come out easily . We added half APF flour so the muffins won’t be dense . I will try with full whole wheat and update the recipe.

3. GRAHAM CRACKER FRUIT CAKE . The cake is moist with Crispy crust. Cool the cake before slicing. Refrigerate if left any as the Cake is prepared with fruit. Warm for 30 seconds before you serve.

4.MOIST STRAWBERRY NUTS CAKE. It is an eggless no butter cake. The Cake is moist and had nice flavor from Vanilla essence and Ghee. Banana’s are good combination with Strawberries and the cake is moist. 


5. EGGLESS WHOLE WHEAT PINEAPPLE CAKE. It is a two layer flavored cake. The whole batter is mixed with Pineapple and the bottom layer has Coconut flavor and top Chocolate flavor. Baked for 40 minutes.



Eggless Whole wheat Pineapple Cake – Kids lunch Box Dessert

 10 more days for School . I’m enjoying Baking with my Kids. Last week we baked Egg less pineapple cake with Wholewheat flour. It is  Moist with Crispy crust. Now my kids had list of Dessert’s that I need to pack in their Lunch Box. Last whole year I packed Ladoo’s prepared with Nuts and seeds for Lunch Box and After school snack. This year they want me to pack both . This Pineapple Cake  is a two layer recipe. The whole batter is mixed with Pineapple and we divided it into two  parts. The bottom layer has Coconut flavor and the top with Chocolate flavor. Instead of butter and Oil we added Ghee . If you don’t like Ghee you can use Oil . We baked for 40 minutes and tooth pick came out clean . If it doesn’t come clean Bake for 10 more minutes. Here is the simple recipe . 

8 Servings. Preparation time : 15 minutes Baking time : 40 minutes and 10 Minutes if tooth pick didn’t come out Clean .


1. Whole wheat flour – 1 1/4 th cup

2. Baking soda – 1/2 tsp

3. Salt – Pinch

4. Chocolate powder – 2 tbsp ( Swiss miss) 

5. Vanilla essence – 1 tsp

6. Pine apple juice –  1 cup

8.Ghee – 5 tbsp or 2 tbsp Oil and 3 tbsp Ghee

9. Brown sugar – 3/4 th cup or Coconut sugar or Sweetner of your choice ( Taste the batter and add accordingly)

10.  Dry Coconut  – 1/4 th cup


1.  In a Bowl mix Whole wheat flour, Baking soda and Salt .

2. In a large  Bowl  Cream Brown sugar , Ghee  and Vanilla essence . Add Pineapple juice and give a good stir.

3.Gradually add dry Ingredients to wet Ingredients and Mix well.

4. In half batter add Dry Coconut . In the remaining half batter add Chocalate powder and Mix well .

5. Grease Loaf pan  well with Ghee or Oil .

6. Pour half the batter( Coconut mixed)  into Loaf pan . Spoon the Chocolate powder batter on top . Use a tooth pick and swirl the batter around.

7.  Preheat the oven at 350 degrees F.  Bake  for 40 Minutes . Extra 10 minutes if tooth pick didn’t come out clean.



Graham Cracker Fruit Cake . Doesn’t need any frosting.

Summer Baking with Kids . This is our fifth Summer Baking . This time we tried with Graham crackers and Wheat flour combination and without eggs. We added fruit . I like moist Cakes instead of dry and Nuts for a little bite. If you have Kids who are interested in Baking try the Cake recipes I’m sharing.  My kids enjoy  gathering , Measuring, Mixing and tasting the batter. Every time we are trying with different Ingredients ,  they get excited about the final product. It didn’t fail . The Cake is tasty with Crispy Crust . Cool it before slicing. Refrigerate the rest as it was prepared with fruit . Warm for 30 seconds before you serve. We baked two Loaf cakes and stayed good for more than 5 days. Here is the recipe :

Simple and tasty cake recipe you can Bake with your Kids . Doesn’t need any frosting.

Serving 8 .

Preparation time : 15 minutes Baking time : 40 Minutes and 10 more minutes if tooth pick didn’t come out Clean .


  1. Wheat flour – 3/4 th Cup , Graham Cracker Powder – 1/2 Cup or Any Biscuit powder of your choice – 1/2 cup

2. Brown Sugar – 3/4 th Cup ( Taste the batter , if needed add 1/4 th Cup )

3. Milk – 1/2 cup

4. Grated Apples – 2 or Pineapple or Pear 

5. Chopped Cashews and Pistachio’s – 2 Handfuls

6. Oil – 2 tbsp and Ghee – 3 tbsp

7. Baking soda – 1 tsp and Salt – Pinch

7. Vanilla essence – 1 tsp

8. Chocalate powder – 2 tbsp 


1. Mix Brown Sugar , Oil , Ghee , Milk and Vanilla essence with Hand Blender .

2. Mix Dry ingredients ( Whole wheat flour, Graham Cracker Powder , Baking soda and Salt )

3. Add dry ingredients to wet Ingredients slowly . Mix well until both are well incorporated .

4. Fold in grated apples , Chopped Nuts and Chocolate powder .

5. Grease loaf pan with Oil and pour the batter.

6. Pre heat Oven at 350 degrees F and Bake for 40 minutes ( Bake extra 10 minutes if tooth pick didn’t come out clean ) .

7. Cool and loose the edges with the help of Knife and un mould . Wait 10 more minutes and Cut into Slices . 

Note : Refrigerate the rest as it is prepared with fruit. Warm 30 seconds before you serve. 


Apple Cinnamon Muffins – Kids Lunch Box Dessert/ Summer Snack /After School snack

This week Baking Apple Cinnamon Muffins . We added  4 Medium apples and Muffins are moist and tasty with Cinnamon flavor and Ghee . Yes Ghee in Muffins.  Save the recipe so you can pack for Kids Lunch Box once the School’s are Open. I like adding Ghee to my Cake recipes. First time we added to Apple cake and we loved the flavor and taste it added. We added half APF flour and Half Wheat flour , so the Muffins  will be little fluffy instead of dense.  .  I like adding Nuts for a little  bite. Here is the Simple recipe with few Ingredients .

Recipe for 12 Muffins.

Preparation time: 15 Minutes Baking time : 25 Minutes


1 Cup – Measuring cup 

1. APF flour  – 1 Cup

2. Whole wheat flour – 1 cup ( I will try with 2 cups Whole wheat flour and will update)

3. Baking Powder – 2 tsp

4. Brown Sugar  –  1 cup . Taste the batter . If needed add little more .

5. APPLES – 4 ( Medium , Peeled and Grated)

5. Cinnamon sugar – 2 tsp

6. Oil – 2 tbsp and Ghee – 3 tbsp

7. Chopped Nuts – 1/2 cup ( Cashews and Pistachio’s)

8. Salt – Pinch

9. Milk – 1 cup

10. Vanilla essence – 1 tsp


1. In a Mixing Bowl combine APF flour, Wheat flour, Baking powder , Cinnamon Sugar .

2. In second Bowl stir together  Brown Sugar , Oil and Ghee . 

3. Add Milk , Vanilla essence . Mix with Hand Blender .

4. Gradually add Dry Ingredients to Wet Ingredients and Mix with Hand Blender.

5. Fold in Grated Apples and Chopped Nuts .

6. Preheat Oven to 375 degrees F .

7.  Grease the Cupcake liners with little Oil or Ghee. Line the Muffin Pan with Cupcake Liners and Pour batter about 3/4 th full.

8. Bake for 25 minutes . Check with toothpick.

9. Once Baked remove Muffin tray from Oven and allow to Cool .

10. Sprinkle Cinnamon sugar on each Muffin.  

Note : Refrigerate the remaining Muffins and warm for 30 seconds before you serve.


Strawberry Nuts Cake – No Eggs and No Butter Cake 

 This week Baking is with Strawberries .  My kids gets excited if it is a Baking Day .  I didn’t bake all these years as my Kids are small and no interest  and time after doing regular work. My older does the Baking without my  help  and with a little help from her sister. They enjoy measuring, Mixing , making little mess in the Kitchen , using Hand Blender, tasting the Batter , Chopping fruits and Nuts and even they are taking Photo’s ( They need to share things they did in summer ) . This is fifth successful Baking . So far we liked Apple cake , Simple Vanilla Cupcakes, Pineapple Cake and Straw Berry Cake. What is for Next week Baking? After Baking it is Mom’s job to clean the Kitchen and Pots. My Kids Open the oven for every 5 minutes to see whether the cake is  raising and smelling the Cake. They walk restless in the Living room looking at the timer  and to hear the timer to Beep. This Summer i’m having fun watching my kids Baking . This is going to be a good memory for me. It is  an Egg less and No Butter cake . We  added Nuts for little bite in between . The cake is moist and had nice flavor and  aroma from Vanilla essence and ghee. Need to refrigerate because of fruit. Warm for 30 seconds before you serve. Banana’s are good combination with Strawberries and the cake is moist  . Here is a Simple Cake recipe that you can Bake with your Kids . 

Preparation time : 15 Minutes Baking time: 40 Minutes ( Extra 5 to 10 minutes if tooth pick didn’t come out clean)

INGREDIENTS:. 1 cup – One Measuring cup  

1.  Wheat Flour – 1 1/4 th cup  I suggest to bake the cake in a Loaf Pan . 

2. Sweetner of your choice – 1 cup ( White or Brown sugar) 

3. Baking soda –  1 tsp

4. Salt – Pinch

5. Banana’s – 3

6. Straw berries – One measuring cup ( Pitted and Chopped)

7. Vanilla essence – 2 tsp

8. Milk – 1/4 th Cup 

9. Oil – 2 tbsp and Melted Ghee – 3 tbsp

10. Chopped Nuts – 1/2 Cup ( Cashews , Almonds and Pistachio’s)

11. Chocolate powder – 2 tbsp ( Swiss Miss)


  1. Preheat Oven to 350 degrees F .                 2.. Mix flour, Baking Soda and Salt.

3. In another bowl Mash Banana’s with the help of a fork and then with  Hand Blender.

4. Whisk together  Brown  Sugar , Oil, Ghee , Milk and Vanilla essence .

5. Add Banana’s and stir .

6.. Add flour mixture and Blend with Hand Blender.

7. Fold in Chopped Strawberries and Chopped Nuts.

8. Pour into a greased  9 Inch round Pan. I suggest to Bake in a Loaf pan .

9. Bake for 40 minutes( If tooth pick doesn’t come out clean Bake for another 5 Minutes)

10. Cool for 10 minutes and loosen the edges with the help of a fork .

11. Demould  into a plate.

12. Wait for 10 more minutes and cut into Slices .

                              SERVE warm or at room temperature.
