GRAHAM CRACKER FRUIT CAKE – KIDS LUNCH BOX DESSERT / AFTER SCHOOL SNACK

Graham Cracker Fruit Cake . Doesn’t need any frosting.

Summer Baking with Kids . This is our fifth Summer Baking . This time we tried with Graham crackers and Wheat flour combination and without eggs. We added fruit . I like moist Cakes instead of dry and Nuts for a little bite. If you have Kids who are interested in Baking try the Cake recipes I’m sharing.  My kids enjoy  gathering , Measuring, Mixing and tasting the batter. Every time we are trying with different Ingredients ,  they get excited about the final product. It didn’t fail . The Cake is tasty with Crispy Crust . Cool it before slicing. Refrigerate the rest as it was prepared with fruit . Warm for 30 seconds before you serve. We baked two Loaf cakes and stayed good for more than 5 days. Here is the recipe :

Simple and tasty cake recipe you can Bake with your Kids . Doesn’t need any frosting.

Serving 8 .

Preparation time : 15 minutes Baking time : 40 Minutes and 10 more minutes if tooth pick didn’t come out Clean .

INGREDIENTS :

  1. Wheat flour – 3/4 th Cup , Graham Cracker Powder – 1/2 Cup or Any Biscuit powder of your choice – 1/2 cup

2. Brown Sugar – 3/4 th Cup ( Taste the batter , if needed add 1/4 th Cup )

3. Milk – 1/2 cup

4. Grated Apples – 2

5. Chopped Cashews and Pistachio’s – 2 Handfuls

6. Oil – 2 tbsp and Ghee – 3 tbsp

7. Baking soda – 1 tsp and Salt – Pinch

7. Vanilla essence – 1 tsp

8. Chocalate powder – 2 tbsp 

METHOD: 

1. Mix Brown Sugar , Oil , Ghee , Milk and Vanilla essence with Hand Blender .

2. Mix Dry ingredients ( Whole wheat flour, Graham Cracker Powder , Baking soda and Salt )

3. Add dry ingredients to wet Ingredients slowly . Mix well until both are well incorporated .

4. Fold in grated apples , Chopped Nuts and Chocolate powder .

5. Grease loaf pan with Oil and pour the batter.

6. Pre heat Oven at 350 degrees F and Bake for 40 minutes ( Bake extra 10 minutes if tooth pick didn’t come out clean ) .

7. Cool and loose the edges with the help of Knife and un mould . Wait 10 more minutes and Cut into Slices . 

Note : Refrigerate the rest as it is prepared with fruit. Warm 30 seconds before you serve. 

APPLE CINNAMON MUFFINS – KIDS LUNCH BOX DESSERT/AFTER SCHOOL SNACK

Apple Cinnamon Muffins – Kids Lunch Box Dessert/ Summer Snack /After School snack

This week Baking Apple Cinnamon Muffins . We added  4 Medium apples and Muffins are moist and tasty with Cinnamon flavor and Ghee . Yes Ghee in Muffins.  Save the recipe so you can pack for Kids Lunch Box once the School’s are Open. I like adding Ghee to my Cake recipes. First time we added to Apple cake and we loved the flavor and taste it added. We added half APF flour and Half Wheat flour , so the Muffins  will be little fluffy instead of dense.  .  I like adding Nuts for a little  bite. Here is the Simple recipe with few Ingredients .

Recipe for 12 Muffins.

Preparation time: 15 Minutes Baking time : 25 Minutes

INGREDIENTS :

1 Cup – Measuring cup 

1. APF flour – 1 Cup

2. Whole wheat flour – 1 cup

3. Baking Powder – 2 tsp

4. Brown Sugar  –  1 cup . Taste the batter . If needed add little more .

5. APPLES – 4 ( Medium , Peeled and Grated)

5. Cinnamon sugar – 2 tsp

6. Oil – 2 tbsp and Ghee – 3 tbsp

7. Chopped Nuts – 1/2 cup ( Cashews and Pistachio’s)

8. Salt – Pinch

9. Milk – 1 cup

10. Vanilla essence – 1 tsp

METHOD :

1. In a Mixing Bowl combine APF flour, Wheat flour, Baking powder , Cinnamon Sugar .

2. In second Bowl stir together  Brown Sugar , Oil and Ghee . 3. Add Milk , Vanilla essence .

4. Gradually add Dry Ingredients to Wet Ingredients and Mix with Hand Blender.

5. Fold in Grated Apples and Chopped Nuts .

6. Preheat Oven to 375 degrees F .

7. Line the Muffin Pan with Cupcake Liners and Pour batter about 3/4 th full.

8. Bake for 25 minutes . Check with toothpick.

9. Once Baked remove Muffin tray from Oven and allow to Cool .

10. Sprinkle Cinnamon sugar on each Muffin.  

Note : Refrigerate the remaining Muffins and warm for 30 seconds before you serve.

MOIST STRAWBERRY NUTS CAKE – NO EGGS , NO BUTTER CAKE

Strawberry Nuts Cake – No Eggs and No Butter Cake 

 This week Baking is with Strawberries .  My kids gets excited if it is a Baking Day .  I didn’t bake all these years as my Kids are small and no interest  and time after doing regular work. My older does the Baking without my  help  and with a little help from her sister. They enjoy measuring, Mixing , making little mess in the Kitchen , using Hand Blender, tasting the Batter , Chopping fruits and Nuts and even they are taking Photo’s ( They need to share things they did in summer ) . This is fifth successful Baking . So far we liked Apple cake , Simple Vanilla Cupcakes, Pineapple Cake and Straw Berry Cake. What is for Next week Baking? After Baking it is Mom’s job to clean the Kitchen and Pots. My Kids Open the oven for every 5 minutes to see whether the cake is  raising and smelling the Cake. They walk restless in the Living room looking at the timer  and to hear the timer to Beep. This Summer i’m having fun watching my kids Baking . This is going to be a good memory for me. It is  an Egg less and No Butter cake . We  added Nuts for little bite in between . The cake is moist and had nice flavor and  aroma from Vanilla essence and ghee. Need to refrigerate because of fruit. Warm for 30 seconds before you serve. Banana’s are good combination with Strawberries and the cake is moist  . Here is a Simple Cake recipe that you can Bake with your Kids . 

Preparation time : 15 Minutes Baking time: 40 Minutes ( Extra 5 to 10 minutes if tooth pick didn’t come out clean)

INGREDIENTS:. 1 cup – One Measuring cup  

1. Flour – 1 1/4 th cup ( Wheat flour – 1/2 cup and APF flour – 3/4 th cup) or 3/4 th cup Wheat flour and 1/2 cup APF flour 

2. Sweetner of your choice – 1 cup ( White or Brown sugar) 

3. Baking soda –  1 tsp

4. Salt – Pinch

5. Banana’s – 3

6. Straw berries – One measuring cup ( Pitted and Chopped)

7. Vanilla essence – 2 tsp

8. Milk – 1/4 th Cup 

9. Oil – 2 tbsp and Melted Ghee – 3 tbsp

10. Chopped Nuts – 1/2 Cup ( Cashews , Almonds and Pistachio’s)

11. Chocolate powder – 2 tbsp

METHOD: 

  1. Preheat Oven to 350 degrees F .2.. Mix flour, Baking Soda and Salt.

3. In another bowl Mash Banana’s with the help of a fork and then with  Hand Blender.

4. Whisk together Sugar , Oil, Ghee , Milk and Vanilla essence .

5. Add Banana’s and stir .

6.. Add flour mixture and Blend with Hand Blender.

7. Fold in Chopped Strawberries and Chopped Nuts.

8. Pour into a greased  9 Inch round Pan.

9. Bake for 40 minutes( If tooth pick doesn’t come out clean Bake for another 5 Minutes)

10. Cool for 10 minutes and loosen the edges with the help of a fork .

11. Demould  into a plate.

12. Wait for 10 more minutes and cut into Slices .

                              SERVE warm or at room temperature.

EGGLESS WHOLE WHEAT APPLE CAKE – KIDS LUNCH BOX DESSERT

Egg less Whole Wheat Apple Cake – Kids Lunch Box Dessert

  Egg less Whole Wheat Apple  Cake is my first Cake post in my Blog. I don’t bake . My daughter ( In middle School) is a self taught baker and Baked this Eggless Apple cake using my recipe . It turned out delicious . The Cake is moist because of apple with Crispy crust. We used Oil and Ghee instead of Butter and Whole wheat flour instead of APF flour. You can use Sweetner of your choice ( White or Brown sugar) . It took 15 minutes to Prepare and Baking 40 minutes and additional 10 minutes ( If tooth pick didn’t come out clean) . I don’t have Cocoa  Powder at home , so we used Chocolate Powder . Serve as a Dessert or Pack for Kids Lunch Box Dessert . Simple recipe with easy available Ingredients.

INGREDIENTS:  

One cup – Measuring Cup

1. Whole wheat flour – 1 1/2 cup

2. Sugar – 1 cup ( White or Brown)  Note : Add 3/4th cup . Taste the Batter , if needed add 1/4 th Cup 

3. Baking soda – 1 teaspoon

4. Salt – 1/4 th teaspoon

5. Milk – 1 cup

6. Vanilla essence – 1 teaspoon

7. Oil – 2 tablespoon , Ghee – 2 tablespoon

8. Chocolate Powder – 4 tablespoon ( Swiss miss)

9. Apple – Medium ( Peeled and Chopped)

METHOD :

1. Mix Wheat flour , Salt and Baking soda in a Bowl

2. Mix Sugar, Oil , Melted Ghee in another Bowl . Add Milk and Vanilla essence . Use Hand Blender and Mix well .  

3. Add dry Ingredients to wet Ingredients and Mix with the help of Electric beater until both are well incorporated  .

4.  Grease Loaf  Pan with Oil . Pour half the batter in a Loaf  Pan and fold in finely chopped apples .

5 . In remaining  half batter add Chocolate Powder . Drizzle Chocolate Powder batter into the Loaf Pan . Swirl with tooth Pick .

6. Preheat Oven at 350 degrees  F and Bake for 40 Minutes ( If tooth pick didn’t come Clean Bake for another 10 minutes )

7. Cool for 10 minutes and loosen the edges with the help of Knife and unmould . Wait for 10 more minutes and cut into Slices. 

Serve as a Dessert or pack for KIDS LUNCH BOX 

BAKED CHICKPEA CRACKERS – KIDS LUNCH BOX SNACK/AFTER SCHOOL SNACK

Baked Chickpea Onion Crackers for Kids Lunch Box / After school Snack 

It is a Simple recipe to prepare and pack for Kids Lunch Box as a snack or for  Kids staying at home for Summer Vacation. It takes less than 10 minutes to gather the Ingredients and for  Mixing  the dough  . No need to rest the dough . Roll them into balls and press them as thinly as possible  with the help of round based Bowl for Crispy crackers. Prick with fork , so they won’t puff up.  Kids are going to like these Crackers as they are not Spicy . Here is a Simple recipe with 10 Ingredients. 

Recipe for 12 Crackers . Preparation time : 10 Minutes Baking time : 20 Minutes

INGREDIENTS :

1. Wheat flour – 3/4 th Cup

2. Chickpea flour – 1/2 cup

3. Oil –  2 to 3 tbsp

4. Salt

5. Curry Powder , Black Pepper powder , Mixed Herbs 

5. Yogurt( Curd) – 2 tbsp

6. Baking powder – 1/2 tbsp

7. Onion – 1/2 cup finely Chopped

8. Water – Less than 1/4 th Cup

9. Chopped Coriander

10. Cumin seeds – 1 tbsp

METHOD :

1. In a Bowl mix Wheat flour , Chickpea flour, Cumin seeds, Salt, Black pepper , Curry Powder, Mixed herbs, Yogurt(Curd) , Baking Powder , Oil, Chopped Onion and finely chopped coriander.

2. Mix well with your Hand .

3. Add water and make a dough . No need to rest the dough .

4. Grease your hands with little Oil .

5. Divide the dough into 12 equal portions.

6. Shape them like a ball and Place on a Baking tray lined with Parchment paper.

7. Press the dough ball with the help of a round Bowl as thin as possible .

8. Prick holes with the help of fork so they won’t puff up.

9. Bake at 350 for 10 minutes .

10 . After 10 minutes take them out of the Oven and flip the crackers. Grease every Cracker with Oil . Bake for 10 more minutes.
