When Kids say they are not hungry for Breakfast , then time to try something new for regular Breakfast. When ever I crave for something sweet I add some Jaggery and fine Daliya  or Semolina and nuts  to Milk and satisfy my sweet Cravings . This dipping is new for my Kids but not for me. I remember my mother prepares with rice flour , milk and Jaggery and serve with Dosa instead of regular Chutney . It taste soooo good. Here is my Version .

It will taste good at room temperature , so you can even pack for Kids Lunch Box with Dosa.

RECIPE for 3 . Preparation and Cooking time : 10 Minutes .

INGREDIENTS :

1. Milk – 8 Ounces ( One glass )

2. Nuts  – 1/2 Cup ( Soaked)

3. Semolina( Sooji) or Rice flour – 1 tbsp ( for thickening) 

4. Jaggery or Brown Sugar or Sweetner of your choice – 2 tbsp or accordingly 

5. Cardamom – 3 ( powdered)

6. Ghee – 1/2 tbsp

METHOD :

1. Grind 1/2 cup Soaked  nuts with Cardamom  and milk .

2. Heat 1/2 tbsp Ghee and roast  semolina ( sooji). If you want to use Rice flour , don’t roast rice flour.

3. Add milk slowly and mix without lumps. Once cooked switch off the stove and add Jaggery  or Brown Sugar or Sweetner of your Choice . And Ghee.

4. Check for sweetness and add accordingly.

5. SERVE with crispy  Dosa (Mixed Dal Dosa with less rice ) .

NO COOKING DESSERT – 5 MINUTES DESSERT RECIPE

No Cooking Dessert

No cooking Dessert is a 5  minutes Dessert recipe that you can eat Instantly or prepare and refrigerate and can take for your Workplace. The first time I tasted Cottage cheese is in Hospital when my elder one was born. They served for Lunch along with fruits. I really liked the combination of Cottage cheese with fruit. My favorite is with Mango . Then Strawberries and Banana’s and other seasonal fruits . Cheese is little bland so I added little Sweetner and Cardamom for flavor and Nuts .  Cottage Cheese is good source of Protein ( 4 Ounces – 10 grams protein) . I eat at least 8 Ounces with fruit and Nuts  during Lunch time along with a piece of toast twice or thrice a week  . It is filling and satisfying .Perfect for warm Weather . Here is the Simple recipe .

Cottage cheese is healthy to eat as a part of a balanced diet. Low in Calories and good source of protein. It is available in small curd or large curd preparation with different fat levels. Good source of Calcium a mineral that plays a major role in tooth and bone health and in prevention of Osteoporosis. Look for low sodium or no sodium cottage cheese. it pairs well with Fruits, Nuts and dry fruits. It has became favorite for people who are trying to loose their weight. Even though good eat in moderation. Cottage cheese is ideal before bed because it includes lot of Casein protein which releases slowly into the body . Recipe for One .

Time for Preparation – 5 minutes if you have Washed and Cut fruit.

INGREDIENTS :

1. Cottage Cheese – 8 Ounces

2. Chopped Dates or Raisins or Honey or Sweetner of your Choice

3. Powdered Cardamom – 2

4.  Chopped Fruits ( Mixed fruits or Just Mango or Strawberries or any Seasonal fruit or with Banana)

5. Chopped Nuts 

Method :

                   Mix Chopped Nuts , Sweetner and Cardamom to 8 Ounces of Cottage cheese.  As shown in the Picture , transfer to a Bowl or box ( in the Center of the Box) and Place chopped fruit on the sides. Don’t mix . Mix and eat when you  are ready to eat. 

OATS LADOO – KIDS LUNCH BOX DESSERT

Oats Ladoo – 7 Ingredients recipe – Kids Lunch Box Dessert

Oats Ladoo is a tasty Dessert with Less Ingredients and Less Work  that you can Pack for Kids Lunch Box or After School Snack . One Ladoo is enough to satisfy your Sweet cravings.  Prepare over the Weekend and enjoy Whole week .It doesn’t need much Cooking expect roasting nuts and Seeds. I used Jaggery , Raisins and Dates . Dates for binding Ladoo’s . So we can use less Ghee . Simple recipe that you can prepare 20 Ladoo’s in less than 30 Minutes ( Roasting, Grinding and Binding) . Store at room temperature.

                  Here is a Simple recipe with 5 main Ingredients. 

Recipe foe 20 Medium Ladoo’s . Time taken : 30 minutes 

INGREDIENTS:

One cup – One Measuring cup

1. Oats – 1 Cup

2. Roasted Peanuts – 1 cup , Roasted Sesame seeds- 1/4 th cup , Roasted Channa Dal – 1/2 cup

3. Ghee – 3 tbsp and 1/2 tbsp for shaping Ladoo’s

4. Sweetner – Jaggery – 1/2 Cup , Raisins – Handful , Dates – 11

5. Cardamom – 10 ( Powdered)

6. Nuts – 1/2 cup( Cashews and Pistachio’s) Chopped

7. Dry Coconut – 1/4 th Cup

METHOD :

1. Roast Peanuts , transfer to a Bowl . Roast Oats and Sesame seeds separately and transfer to Peanuts Bowl . To this Bowl add Roasted Channa Dal, Dry Coconut  and Powdered Cardamom .

2. Grind altogether and transfer to a Bowl . Add Powdered Jaggery , Raisins  and Dates.

3. Grind in 2 to 3 Batches . Transfer to a Bowl . Add Ghee and Chopped Cahews and Pistachio’s  .

4. Microwave for 30 minutes or else if you are able to bind Ladoo’s , no need to Microwave . If you don’t have microwave , just warm on Stove top for few minutes.

 5. Take a Handful of mixture and bind Ladoo . Grease your hand with little Ghee and reshape it . Repeat the process with rest of the Mixture . Store at room temperature .

                         Serve as a DESSERT or PACK for KIDS LUNCH BOX as a Dessert .

NO COOKING LADOO – KIDS LUNCH BOX DESSERT WITH DATES AND ROASTED CHANNA DAL

No Cooking Ladoo – Kids Lunch Box Dessert with Dates and Roasted Channa Dal 

we love Ladoo as a dessert after Lunch or I pack for Kids Lunch Box or after School snack .   I prepare different kinds of Ladoo’s which stays good for few days and you can store in an air tight container. Easy for kids to grab for Snack time . Roasted Channa Dal Ladoo is prepared with roasted Channa Dal , Jaggery or Sugar  , Ghee  which doesn’t need any Cooking . Just grind and Bind Ladoo’s .We  need to  add  little  Ghee to Bind Ladoo’s. So , instead of adding more Ghee I added Dates for Binding Ladoo’s . Raisins for little sweet bite in between and Cashews for little crunch . After grinding warm the mixture for 40 seconds in Microwave . So you can bind Ladoo’s easily . Here is a Simple recipe with few ingredients . 

Recipe for 10 medium Ladoo’s . 

INGREDIENTS:

1 Cup – Measuring cup

1. Roasted Channa dal – 1 Cup

2. Dry coconut – 1/2 cup

3. Jaggery – 1/2 cup

4. Dates – 10

5. Raisins – Handful

6. Chopped Cahews – 2 Handfuls

7. Cardamom – 6

8. Ghee – 2 tbsp

METHOD :

1,Grind Roasted channa Dal and Dry coconut. Transfer to a Bowl .

2 . To this add Powdered Jaggery  , Cardamom and Dates.

3. Grind in 2 or 3 batches.

4. Transfer to a bowl and add Raisins and Chopped Cashews and 2 tbps Ghee . Mix and warm in the Microwave for 40 seconds.

5. Take a handful of the mixture and bind Ladoo’s. Grease your hand with Ghee and shape them  again. Repeat the process with the rest of the mixture.

Pack for Kids Lunch Box or After School snack or as a Dessert.

RAISIN LADOO – KIDS LUNCH BOX DESSERT/AFTER SCHOOL SNACK /DESSERT

Raisin Ladoo is a very Simple and easy Dessert to prepare with everyday Ingredients from your Pantry in 3 easy steps. ROAST , GRIND and BIND the Ladoo’s. Stays good for few days as I  didn’t add any Milk . To prepare Diwali sweets I bought big packet of Raisins . Now and then I’m using in Kheer and Payasam . Still I have 1/2 packet in the freezer that I have to use before expiry date. I didn’t prepare any Ladoo with Roasted Channa dal  for a long time. Remember eating during School days as a Dessert in Lunch Box or after School snack. Usually it is prepared with Sugar or Jaggery , Ghee and Coconut. Instead of Sugar and Jaggery I used raisins for sweetness and Dates for Binding the Ladoo. Need only tbsp of Ghee for aroma and taste . Cardamom is Vanilla Bean in Indian Desserts. Adds Sweet aroma to any  Dessert . Taste the mixture before binding Ladoo’s , if needed add some Powdered Jaggery . We like a little bite in Ladoo’s. So I added chopped Cashews and Pistachio’s . Adding them is Optional.Don’t skip dry coconut. Here is a Simple recipe for Raisins Ladoo . Make good use of Raisins if you have in your Pantry or refrigerator before expiry date . These Ladoo’s are prepared with Raisins – Substitute for Sugar . Raisin Ladoo in 3 easy steps. Try over the Weekend and pack for Lunch Box/ After School Dessert.

 Recipe for 10 medium Ladoo’s .

Preparation time : Less than 30 minutes

Pack for KIDS LUNCH BOX 

INGREDIENTS :

1. Raisins – 1/2 Measuring cup

2. Dates – 10 ( Deseeded and Chopped)

3. Roasted Channa Dal – 1/2 Cup

4. Roasted Peanuts – 1/2 cup ( store bought)

5. Ghee – 2 tbsp

6. Cardamom – 6 ( Powdered )

7. Dry Coconut – 1/4 th cup

8. Chopped Cashews and Pistachio’s – 1/2 Cup ( Optional)

METHOD:

1. Grind Roasted Peanuts and Roasted Channa Dal into fine Powder  . Transfer to a Bowl.

2. To this Powdered mixture add Dry coconut , Raisins , Cardamom and Chopped Dates . Mix well .

3. Grind this mixture into a fine Powder in 2 to 3 batches  .

4. Transfer to a bowl and add 2 tbsp Melted Ghee and Chopped Cashews and Pistachio’s  . Before adding Ghee taste the mixture for Sweetness and add accordingly .

5. Take Handful of mixture and shape Ladoo’s. Repeat the process with the rest of the mixture . Store in a Box .

            Pack for Kids Lunch Box or After School Snack or Serve as a Dessert .

NOTE: Before adding Ghee taste the mixture for Sweetness . If need add 1/4 th cup Powdered Jaggery .

INSTANT MOONG DAL LADOO WITHOUT ROASTING AND GRINDING

Instant Moong Dal Ladoo – Kids Lunch Box / Dessert /After School snack

Moong Dal is a simple Dessert recipe prepared with Roasted Moong Dal and Sugar. In today’s recipe I took a little help from store bought flour because I’m not able to grind  Dal into a fine Powder . Tried with store bought flour and they turned out delicious.  So no need of Roasting Dal and Grinding. Roast the flour on medium flame till rawness goes( Say 7 to 10 minutes).Instead of Sugar I used Jaggery and 2 tbsp Ghee. We don’t need more Ghee and 1/2 tbsp for Binding Ladoo’s. Check the Procedure how to make Ladoo’s with Less Ghee. These  ladoo’s are different in taste and texture because I added few more ingredients for an interesting taste. They are tasty and you can stop eating One. Here is the recipe :

Recipe for 15 Medium Ladoo’s .

Preparation and Cooking time : 30 minutes 

Note : 1 cup = 1 Measuring Cup . If you want you can add more Ghee. But they tasted good with 2 tbsp Ghee.

INGREDIENTS:

1. Yellow Moong Dal flour – 2 Measuring Cups

2. Jaggery – 1 1/2 Cup

3. Water – 1/2 cup

4. Roasted Cashews – 1/2 Cup( chopped)

5. Raisins – 2 Handfuls ( chopped)

6. Ghee – 2 tbsp + 1/2 tbsp

7.Cardamom – 10 ( Powdered)

8. Dry coconut – Handful

METHOD:

1. Roast Yellow Moong Dal flour with 2 tbsp Ghee on Medium flame for 5 to 7 minutes or Until raw smell goes. Transfer to a Bowl .

2. To this add Chopped Cashews , Chopped Raisins , Powdered Cardamom and Dry Coconut  . Mix well

3. In the same pan boil Water and add Powdered Jaggery and Melt ( Don’t over boil ) . Add this melted Jaggery water to Moong Dal Powder . Mix with Spoon .

4. When it is light warm take a Handful of Mixture and shape them like Ladoo’s . Grease your hands with Ghee  and reshape the Ladoo’s .

5. Repeat the Process with rest of Moong Dal mixture  . STORE in a Box .
