Egg less Whole Wheat Apple Cake – Kids Lunch Box Dessert

  Egg less Whole Wheat Apple  Cake is my first Cake post in my Blog. I don’t bake . My daughter ( In middle School) is a self taught baker and Baked this Eggless Apple cake using my recipe . It turned out delicious . The Cake is moist because of apple with Crispy crust. We used Oil and Ghee instead of Butter and Whole wheat flour instead of APF flour. You can use Sweetner of your choice ( White or Brown sugar) . It took 15 minutes to Prepare and Baking 40 minutes and additional 10 minutes ( If tooth pick didn’t come out clean) . I don’t have Cocoa  Powder at home , so we used Chocolate Powder . Serve as a Dessert or Pack for Kids Lunch Box Dessert . Simple recipe with easy available Ingredients.

Serving 8 . Preparation time :15 minutes Baking time : 40 Minutes and 10  more minutes ( If tooth pick inserted didn’t come Clean )

INGREDIENTS:  

One cup – Measuring Cup

1. Whole wheat flour – 1 1/2 cup

2. Sugar – 1 cup ( White or Brown)  Note : Add 3/4th cup . Taste the Batter , if needed add 1/4 th Cup 

3. Baking soda – 1 teaspoon

4. Salt – 1/4 th teaspoon

5. Milk – 1 cup

6. Vanilla essence – 1 teaspoon

7. Oil – 2 tablespoon , Ghee – 2 tablespoon

8. Chocolate Powder – 4 tablespoon ( Swiss miss)

9. Apple – Medium ( Peeled and Chopped)

METHOD :

1. Mix Wheat flour , Salt and Baking soda in a Bowl

2. Mix Sugar, Oil , Melted Ghee in another Bowl . Add Milk and Vanilla essence . Use Hand Blender and Mix well .  

3. Add dry Ingredients to wet Ingredients and Mix with the help of Electric beater until both are well incorporated  .

4.  Grease Loaf  Pan with Oil . Pour half the batter in a Loaf  Pan and fold in finely chopped apples .

5 . In remaining  half batter add Chocolate Powder . Drizzle Chocolate Powder batter into the Loaf Pan . Swirl with tooth Pick .

6. Preheat Oven at 350 degrees  F and Bake for 40 Minutes ( If tooth pick didn’t come Clean Bake for another 10 minutes )

7. Cool for 10 minutes and loosen the edges with the help of Knife and unmould . Wait for 10 more minutes and cut into Slices. 

Serve as a Dessert or pack for KIDS LUNCH BOX 

NO COOKING DESSERT WITH OVER RIPED BANANA’S

No Cooking Dessert with Over riped Banana’s 

If you have Over riped Banana’s and no one in your family are interested  to eat and want to Prepare Simple Dessert , here is the recipe . Banana’s have originated around 4000 years ago and from there they spread throughout the world. Banana’s are good source of Potassium an essential mineral for maintaining normal Blood Pressure and heart function. Over riped Banana ‘s are  packed with antioxidants . Antioxidants are extremely beneficial for your body because they prevent or delay some types of cell damage and lower the risk of certain diseases. Over ripe banana’s are easy to digest . In over ripe Banana’s the starch changes to Simple sugars. ( Diabetics should avoid over ripe Banana’s because they may result in a quicker rise in Blood sugars) . Unripe Banana is full of Complex carbohydrates . Brown spotted Banana’s is a sign that antioxidants levels have increased . The brown spots form when the chlorophyll in the fruit begins to break down and turn into antioxidants. They should be left ripen at room temperature. To fasten ripe process you should place Banana in a Brown Bag or wrap in a News paper. Source : Health Magazines . Time taken to prepare : 10 minutes

Recipe for 2 . 

INGREDIENTS :

1. Over riped Banana’s – 2

2. Graham Crackers – 4 ( Crushed into Powder )

3. Cashews – Handful ( Soaked )

4. Roasted Crushed Nuts – Almonds , Pistachio’s and Walnuts

5. Cardamom – 4 ( Powdered)

6. Milk – 2 tbsp

7. Strawberries – Sliced

8. Brown Sugar – 1 tbsp or Raisins- 10 or Dates – 2 ( Chopped)

METHOD:

1. Crush Graham Crackers in a Ziplock.

2. Grind  Soaked Cashews with Milk and Sweetner of your Choice . Then add One sliced Banana  and Cardamom . Pulse for 3 to 4 times. Transfer to a Bowl . Mix with Chopped Nuts.

3. In a serving Bowl pour Half of the Crushed Graham Crackers and Half of the Blended Banana .

4. Top with sliced Banana and Sliced strawberry .

5. Repeat the layers . Cover with Sliced Banana , Sliced strawberries and Crushed Nuts . 

SERVE immediately .

TEN KIDS LUNCH BOX DESSERT/AFTER SCHOOL SNACK /DESSERT/SUMMER SNACK

 One Ladoo is enough to Satisfy Kids sweet Cravings. Healthy Ladoo’s prepared with everyday Ingredients from your Pantry.  No sugar added .Pack for  Kids Lunch Box /After school snack/Dessert /Summer Snack . These are very easy Dessert recipes which doesn’t need much Cooking except ROASTING .Preparation and Binding time – 30 minutes.

                                Roast , Grind and Bind Ladoo’s . I have used very less Ghee  to  PREPARE these  Dessert’s . Spend 30 minutes and enjoy whole week . I have packed these Ladoo’s whole Year for my Kids Lunch Box/ After school Snack . Now I’m filling the jars for Summer snack .

DIPPING FOR DOSA – BREAKFAST / KIDS LUNCH BOX

When Kids say they are not hungry for Breakfast , then time to try something new for regular Breakfast. When ever I crave for something sweet I add some Jaggery and fine Daliya  or Semolina and nuts  to Milk and satisfy my sweet Cravings . This dipping is new for my Kids but not for me. I remember my mother prepares with rice flour , milk and Jaggery and serve with Dosa instead of regular Chutney . It taste soooo good. Here is my Version .

It will taste good at room temperature , so you can even pack for Kids Lunch Box with Dosa.

RECIPE for 3 . Preparation and Cooking time : 10 Minutes .

INGREDIENTS :

1. Milk – 8 Ounces ( One glass )

2. Nuts  – 1/2 Cup ( Soaked)

3. Semolina( Sooji) or Rice flour – 1 tbsp ( for thickening) 

4. Jaggery or Brown Sugar or Sweetner of your choice – 2 tbsp or accordingly 

5. Cardamom – 3 ( powdered)

6. Ghee – 1/2 tbsp

METHOD :

1. Grind 1/2 cup Soaked  nuts with Cardamom  and milk .

2. Heat 1/2 tbsp Ghee and roast  semolina ( sooji). If you want to use Rice flour , don’t roast rice flour.

3. Add milk slowly and mix without lumps. Once cooked switch off the stove and add Jaggery  or Brown Sugar or Sweetner of your Choice . And Ghee.

4. Check for sweetness and add accordingly.

5. SERVE with crispy  Dosa (Mixed Dal Dosa with less rice ) .

NO COOKING DESSERT – 5 MINUTES DESSERT RECIPE

No Cooking Dessert

No cooking Dessert is a 5  minutes Dessert recipe that you can eat Instantly or prepare and refrigerate and can take for your Workplace. The first time I tasted Cottage cheese is in Hospital when my elder one was born. They served for Lunch along with fruits. I really liked the combination of Cottage cheese with fruit. My favorite is with Mango . Then Strawberries and Banana’s and other seasonal fruits . Cheese is little bland so I added little Sweetner and Cardamom for flavor and Nuts .  Cottage Cheese is good source of Protein ( 4 Ounces – 10 grams protein) . I eat at least 8 Ounces with fruit and Nuts  during Lunch time along with a piece of toast twice or thrice a week  . It is filling and satisfying .Perfect for warm Weather . Here is the Simple recipe .

Cottage cheese is healthy to eat as a part of a balanced diet. Low in Calories and good source of protein. It is available in small curd or large curd preparation with different fat levels. Good source of Calcium a mineral that plays a major role in tooth and bone health and in prevention of Osteoporosis. Look for low sodium or no sodium cottage cheese. it pairs well with Fruits, Nuts and dry fruits. It has became favorite for people who are trying to loose their weight. Even though good eat in moderation. Cottage cheese is ideal before bed because it includes lot of Casein protein which releases slowly into the body . Recipe for One .

Time for Preparation – 5 minutes if you have Washed and Cut fruit.

INGREDIENTS :

1. Cottage Cheese – 8 Ounces

2. Chopped Dates or Raisins or Honey or Sweetner of your Choice

3. Powdered Cardamom – 2

4.  Chopped Fruits ( Mixed fruits or Just Mango or Strawberries or any Seasonal fruit or with Banana)

5. Chopped Nuts 

Method :

                   Mix Chopped Nuts , Sweetner and Cardamom to 8 Ounces of Cottage cheese.  As shown in the Picture , transfer to a Bowl or box ( in the Center of the Box) and Place chopped fruit on the sides. Don’t mix . Mix and eat when you  are ready to eat. 

OATS LADOO – KIDS LUNCH BOX DESSERT

Oats Ladoo – 7 Ingredients recipe – Kids Lunch Box Dessert

Oats Ladoo is a tasty Dessert with Less Ingredients and Less Work  that you can Pack for Kids Lunch Box or After School Snack . One Ladoo is enough to satisfy your Sweet cravings.  Prepare over the Weekend and enjoy Whole week .It doesn’t need much Cooking expect roasting nuts and Seeds. I used Jaggery , Raisins and Dates . Dates for binding Ladoo’s . So we can use less Ghee . Simple recipe that you can prepare 20 Ladoo’s in less than 30 Minutes ( Roasting, Grinding and Binding) . Store at room temperature.

                  Here is a Simple recipe with 5 main Ingredients. 

Recipe foe 20 Medium Ladoo’s . Time taken : 30 minutes 

INGREDIENTS:

One cup – One Measuring cup

1. Oats – 1 Cup

2. Roasted Peanuts – 1 cup , Roasted Sesame seeds- 1/4 th cup , Roasted Channa Dal – 1/2 cup

3. Ghee – 3 tbsp and 1/2 tbsp for shaping Ladoo’s

4. Sweetner – Jaggery – 1/2 Cup , Raisins – Handful , Dates – 11

5. Cardamom – 10 ( Powdered)

6. Nuts – 1/2 cup( Cashews and Pistachio’s) Chopped

7. Dry Coconut – 1/4 th Cup

METHOD :

1. Roast Peanuts , transfer to a Bowl . Roast Oats and Sesame seeds separately and transfer to Peanuts Bowl . To this Bowl add Roasted Channa Dal, Dry Coconut  and Powdered Cardamom .

2. Grind altogether and transfer to a Bowl . Add Powdered Jaggery , Raisins  and Dates.

3. Grind in 2 to 3 Batches . Transfer to a Bowl . Add Ghee and Chopped Cahews and Pistachio’s  .

4. Microwave for 30 seconds or else if you are able to bind Ladoo’s , no need to Microwave . If you don’t have microwave , just warm on Stove top for Couple of minutes.

 5. Take a Handful of mixture and bind Ladoo . Grease your hand with little Ghee and reshape it . Repeat the process with rest of the Mixture . Store at room temperature .

                         Serve as a DESSERT or PACK for KIDS LUNCH BOX as a Dessert .
