Cabbage stir fry  with No Spice powders – Instant pot – Kids Lunch Box.

 Cabbage stir fry in Instant Pot with no spice powders . It is not going to taste bland . Colorful to look and delicious in taste . When ever i prepare this my kids just eat the vegetable and forget about the rest on the plate . Perfect for those who want to reduce carbs in their diet and serve with Low carb grains or with Scrambled egg. It is Simple stir fry recipe you can prepare in very less time and pack for Kids Lunch Box. I usually prepare by adding tomato and other Spices In Biryani, in fritters or prepare a Chutney to serve with appetizers or Cabbage pickle . I tried in Instant Pot and it took less than 5 minutes to Cook ( Not chopping time) . Chop cabbage finely so it will cook evenly . I didn’t take the Picture of finely chopped Cabbage ( I will take picture next time and post ) . I didn’t add any Spices( like red chilli powder , cumin and coriander powder ) and just add one Spice at the end and couple more veggies for color . First time we ate in an Indian restaurant. We liked the taste and I tried couple of times and finally packed in Kids Lunch Box. When ever we go for restaurant I just observe my kids which vegetables they eat more. First they keep a sample of all foods they serve ( Buffet)  . For second time  serving I noticed they are just eating Cabbage with some appetizers  . I thought I’m going to try at home. We like  Cabbage in any form .

Cabbage is one of the best sources of Vitamin k along with other types of Green Leafy vegetables . Vitamin k is needed for bone health because it helps your body use calcium and getting less than recommended amount poses an increase risk of developing osteoporosis. Low in fat and high in fiber. with 22 calories per cup . Shredded cooked cabbage contain 68 percent of the required daily intake of vitamin K. Cabbage has well known cancer preventive compounds and they stimulate enzyme activity and inhibit the growth of Cancer tumors. It is one of the oldest known vegetables . Cabbage dates back to 4000 B.C in Shensi province in China. Cabbage caution. Those with thyroid problems should avoid eating large amounts of cabbage . It interferes with the body absorption of Iodine needed by the thyroid gland. This applies to all cruciferous vegetables . Source : HM

Packed for KIDS LUNCH BOX with Soya Chunks rice , Black eyed Beans salad : 

INGREDIENTS :

1. Cabbage –  ( thinly sliced) Important 

2. Channa dal – 2 tbsp , Black split urad dal – 1 tbsp , Cumin seeds – 1 /2 tbsp , Mustard seeds – 1/2 tbsp, Red chillies . 

3. Finely chopped Coriander and Curry leaves

4. Salt

5. Oil – 2 tbsp and Ghee – 1/2 tbsp ( add at the end)

6. Grind Handful of Coconut with 2 Green chillies , Small piece of ginger and toasted Sesame seeds – 2 tbsp 

7. Color Bell peppers – 1/2 cup ( chopped finely for color)  and Grated carrots – 5 for Color 

8. Roasted peanuts – Handful to add at the end 

9. Juice of Half Lime ( Optional) 

10 . Water – 2 tbsp 

METHOD: 

1. Turn IP on Saute mode . When warm add Oil followed by Channa dal , Black split urad dal , Cumin seeds , Mustard seeds and Red chillies. Green chillies , Curry leaves and Hing too.

2. Add thinly sliced Cabbage and Colored Bell peppers .  Season with Salt . I didn’t add turmeric powder . Mix well . Sprinkle 2 tbsp  water . Cancel  saute . Manual 4 minutes . QPR . Saute for couple more minutes or till  little dry  . Add Ghee . 

3. Add grated carrots  . Mix gently .

4. Transfer to a  Pyrex Bowl . Cool and add Coconut mixture , Chopped Coriander . Squeeze Juice of Lime ( optional)   and add roasted Peanuts .

5. Taste for salt and spices and add accordingly .

STOVE TOP : 

1. Heat a wide pan on medium high flame . When warm add Oil followed by Black split Urad dal , Channa dal , Mustard seeds, Cumin seeds and Red chillies. Green chillies, Curry leaves and Hing too .

2. Add thinly sliced cabbage and Chopped Bell peppers. Season with salt . No turmeric powder . Mix well . Close lid and cook until vegetable is soft . Mix in between to avoid burning.

3. Open the lid and add grated carrot, Coconut powder and finely chopped coriander. Mix gently .

                           Taste for salt and spices and add accordingly .

4. Add roasted Peanuts. Squeeze juice of Half lime( Optional) 

LAUKI SPINACH DAL ( WITH 3 DIFFERENT DALS) , STEAMED RICE – INSTANT POT – PIP AND CABBAGE CHICKPEA PICKLE

Lauki( Green Bottle gourd)  Mango Spinach Dal ( with 3 different  Dals) , Steamed Rice – Instant Pot and  Cabbage  Chickpeas Pickle 

It is not a new recipe but it is new for me because I cooked Dal for the first time in Instant Pot ( Bought 2 months back) and with 3 different dals. Cooked perfectly and right Consistency . Not too thin and not too thick . This dal preparation is little different from regular dals as i didn’t add any tamarind for sour taste. Instead I used Juice of Lime . Cool the Dal and squeeze Lime juice. Don’t add Spinach along with Dal. I added at the end . Even I cooked rice along with Dal . Cooked perfectly and without Mushy . I added tadka at the end as I have to add tadka for Chickpea Pickle . So  3 pots to clean after cooking complete meal . Chickpea Pickle I’m sharing will stay good for a week ( We will finish before that) . We like eating Homemade Pickle with our meal . Enhances the taste of the meal  . I even prepared Phulka( Indian Bread ) and Microwave Papad. Kids will never say no for this meal if they are hungry . Here are the 2 Simple recipes you can prepare in very less time. 

Recipe for 4 People .

INGREDIENTS and METHOD for LAUKI( GREEN BOTTLE GOURD) SPINACH DAL : 

1. Toor dal , Yellow Moong Dal and Channa Dal – 1/2 cup ( Soak for 30 minutes to 1 hour )  Wash before and after soaking.

2. Water – 1 1/2 cup

3. Spinach – 5 Big handfuls chopped

4. Lauki ( Green Bottle gourd) – Medium ( Peeled and Chopped ) , Mango – Medium ( Peeled and Chopped) 

5. Onion – Medium ( finely chopped) , Ginger – small piece , Garlic cloves – 6 ( Peeled and Crushed) 

6. Roma tomatoes – 2 chopped

7. Sambar powder and Curry Powder – 1 tbsp each ( Curry powder is a Blend of Red chilli powder , Coriander and Cumin powder, Garluc and fresh Coriander )

8. Oil – 1 tbsp and Ghee – 1 tbsp

9. Seasoning – Split Black Urad dal – 1 tbsp , Cumin and Mustard seeds – 1/2 tbsp , Broken red chillies – 3 , Hing – Pinch and Crushed Garlic – 6 cloves

10 . Juice of Lime – 1

Method :

1. Turn Ip on saute mode . When warm add 1/2 tbsp Oil and 1/2 tbsp Cumin seeds followed by chopped Onions. Season with Salt and Turmeric. Mix well .

2. Once Onions are brown add chopped Vegetables ( Lauki , Mango and chopped tomatoes) ,  Sambar powder, curry Powder , Soaked dal with water. Mix well .

3. Keep the trivet and Rice Bowl . Close IP with lid.

4. Cancel saute button. Press Manual for 7 minutes . Unplug when you see Low . 

5. NPR after 5 minutes . Open the lid and add chopped Spinach . Mix well and cook for couple of minutes .

            Add Tadka ( seasoning with Garlic, Black split urad dal , Cumin and Mustard seeds  and Hing ) and Ghee. ( NOTE: You can do tadka in the beginning) 

6. Cool and squeeze juice of Lime( If needed) . Taste for salt and Spices and add accordingly .

CHICKPEA CABBAGE PICKLE : 

Chop cabbage finely and transfer to a Bowl . To this add Chickpeas , Red chilli powder ( Mild spicy ) , Cumin powder , Mustard and Fenugreek powder . Heat 2 tbsp Oil and add  Crushed and Chopped  Garlic ,Black split urad dal, Cumin seeds, Mustard seeds , Hing and One red chilli . Add this seasoning to the Pickle . Squeeze Juice of Lime and finely chopped Coriander. Mix well . Taste and add accordingly.

 

CHANNA DAL MASALA CURRY , LAUKI WITH YOGURT AND STEAMED RICE – INSTANT POT – PIP

Channa Dal Masala curry with Lauki ( Green Bottle Gourd ) with Yogurt   and Steamed rice – Instant Pot – PIP 

Because of freezing rain it is half day for Kids. I have to finish cooking Dinner early as there are chances of Power Outage. IP to rescue . I soaked Channa dal to prepare Vegetable Sambar . Instead changed my mind and prepared Channa Masala Curry  with Vegetables , Lauki with Yogurt  and Steamed rice ( PIP) . All cooked in less than 15 minutes. While they are cooking in IP I quickly roasted Spices to add to the Curry and Yogurt . I first grinded Coconut , green chillies and ginger to add to Yogurt . Then I grinded the Spices with the rest of the Coconut green chilli paste and added to Channa Dal curry and Served with Phulka , Steamed rice and Papad. Here are two Simple recipes you can prepare in very less time. 

Recipe for 4 

RECIPE for CHANNA DAL MASALA CURRY : 

1. Channa Dal – 2 Handfuls ( Soaked and washed )

2. Onion – 1 ( Finely Chopped)

3.  Crushed Garlic – 4

4. Tomatoes – 4 ( chopped )

5. Potatoes – 3 to 4 ( Peeled and Cubed) or Eggplant or Both Potato and Eggplant or any other Vegetable of your choice . 

6. Oil – 1 tbsp and Ghee – 1/2 tbsp to add at the end

7. Salt and Turmeric

8. Spices to roast and grind – Dry roast 2 tbsp Sesame seeds , 1 /2 tbsp Cumin seeds , 1/2 tbsp Coriander seeds , 2 Cloves , 2 Cardamom , small stick of Cinnamon and 2 Red chillies . Cool and grind with Handful of Dry coconut and small piece of ginger and 2 Green chillies .

9 . Finely chopped Coriander and Mint leaves .

10 . Water –  4 tbsp

METHOD:

1. Turn IP on saute mode . When warm add Oil followed by Mustard seeds , Cumin seeds and Finely chopped Onions. Season with Salt and Turmeric. Add Crushed Garlic . Fry for couple of minutes .

2. Add Soaked and Washed Channa Dal , Cubed Potato  and chopped Tomatoes . Mix well .

3. Place Trivet and Steel Bowl with Chopped Lauki ( Bottle gourd) . Add 1/4 th cup water and little Salt to Lauki . Followed by rice bowl .

4. Close IP lid. Cancel saute button. RICE MODE  . NPR .

5. Open the lid carefully . Take out Rice Bowl and Lauki Bowl .  Cool for a while and Mix the Channa dal curry gently . Add Spice powder , Ghee , Finely chopped Coriander and Mint leaves. Taste for Salt and Spices and add accordingly .

                SERVE with Phulka , Papad and Lauki( Bottle gourd) raita .

RECIPE for LAUKI( GREEN BOTTLE GOURD  ) with Yogurt  : 

1. Heat 1 tbsp Oil and add 1 tbsp Black urad dal , 1/2 tbsp Cumin seeds , 1/2 tbsp Mustard seeds and 2 Red chillies .

2. To this seasonind add cooked Lauki( Bottle gourd) . Cool before adding to Yogurt( curd) .

3. Once cooled add to Yogurt with Coconut Green chilli and Ginger paste , Chopped Onions , Salt , Chopped tomato and chopped Coriander. 

4. Taste for Salt and Spices and add accordingly. 

                 Serve with Phulka , Channa Dal Masala Curry and Steamed rice .

CABBAGE MASALA CURRY – INSTANT POT

Cabbage Masala Curry – Instant Pot 

 When you are hungry and when you want to cook food for whole family a simple curry and phulka will taste good  . Food always taste better when we are hungry .   I  enjoy Cooking in Instant Pot because no stirring and Baby sitting. For yesterday’s dinner I cooked Cabbage Masala curry and served with Phulka . I didn’t even have to chop finely .After cleaning yesterday’s snow , I was hungry so I wanted to cook something quick.  Just added   big chunks of cabbage and couple more vegetables. Though I added less water it turned out a little soupy . I always keep some Spice powder to add at the end of Stir fry vegetables or to stuff the vegetables. I added the spice powder to absorb the moisture and for extra taste and flavor; it turned out great .  Spices improve the quality of food and enhance the flavor . Just transferred everything to pot and it is ready before i finished preparing Phulka ( Indian Bread) . Here is the Simple recipe . 

Recipe for 3 .

INGREDIENTS: 

1. Cabbage – Medium ( thinly sliced) or Half od Big cabbage head 

2. Potatoes – 3  Peeled and cubed ( small) 

3. Grated ginger and Crushed Garlic – 4 cloves

4. Tomatoes – 3 ( 18 pieces) and Green Peas – 1/2 cup 

5. Oil – 2 tbsp and Ghee – 1/2 to 1 tbsp 

6 . Salt and Turmeric

7. Water – 1/4 th cup ( Measuring cup) 

8. Finely chopped Coriander and Mint leaves

9. Black split Urad – 1 tbsp , Mustard seeds and Cumin seeds – 1/2 tbsp each

10 . Spices to roast and grind – Peanuts – 10 , Sesame seeds – 1 tbsp , Cumin and Coriander seeds – 1/2 tbsp each , Red chillies –  1 or 2 . Cool and grind with Handful of coconut   and Green chillies .

11. Curry Powder  – 1/2 tbsp to 1 tbsp 

METHOD : 

1. Turn IP on saute mode . When warm add Oil followed by Black split urad dal , Mustard and Cumin seeds .  Add Crushed Garlic and Ginger .

2. Add Tomatoes ,  Peeled and cubed Potatoes ,Green peas and Curry Powder ( No need to cook ) . Mix. Add Water . Scrape the bottom if needed . 

3.  Now add d thinly sliced  Cabbage 2 handfuls each time and mix . Add 2 more handfuls and mix and add the rest   . Mix well. Cancel Saute button. Close lid . Manual 6  minutes . NPR .

4. Open the lid and add the SPICE powder . Add 1/2 tbsp Ghee and finely chopped Coriander and Mint Leaves . Taste for salt and spices and add accordingly .
