INSTANT POT MASOOR DAL ( GREEN LENTILS) CABBAGE BIRYANI – ONE POT MEAL FOR LUNCH /DINNER

Instant pot Masoor Dal ( Green lentils) Cabbage Biryani – One pot meal for Lunch /Dinner with raita ( Vegetables in Yogurt ) and salad . WEEKEND LUNCH 

Recipe for 3 to 4 with Raita, Spinach Pakora , Kheer  and Salad. WEEKEND LUNCH 

If you are like me who doesn’t want to spend much time in Kitchen , try this One pot meal with Masoor Dal ( Green Lentils) , Cabbage and vegetables. I prepare this One pot meal for quick Dinner or for Weekend Lunch before going out or when I take Kids to Library activities. Just saute for 2 minutes and add all the ingredients. Done in no time without any water left and No burnt bottom. It stays warm till we come back from activities and ready to eat Lunch . No need to transfer to any container and no need to warm in Microwave. I like adding Masoor dal in my Biryani recipes . It holds shape once you finish cooking and good source of Protein for vegetarians .  I added mild spices so kids can enjoy too . It won’t taste bland . It’s flavorful and tasty One pot meal . Serve with raita , Salad , Spinach Pakora and Kheer .

Lentils have negligible amount of fat and good source of protein without adding any extra fat to the body there by promoting a healthy heart . India has largest number of vegetarians ans Lentils can be a substitute for meat in supplying the required protein . Good source of dietary fiber . Dietary fiber filled food such as Lentils help in controlling blood sugar . Dietary fiber also slows down the rate at which food is absorbed by the blood and thus maintains the sugar level constantly . Lentils have great potential to control cancer growth. Studies conducted at university of Illinois have found that plant lectins a separate type of plant protein originate from foods like lentils , wheat , peanuts have a great influence on cancer cells.Side effects of excessive protein – excessive consumption can pressurize kidneys  in flushing out those excess protein in the body .  Eat in moderation .Source : HM  

RECIPE FOR VEGETABLE RAITA WITH CUMIN SEED OIL :

INGREDIENTS :

1. Basmati rice – One cup ( soak for 30 minutes)

2. Masoor Dal ( Green Lentils) – 1/2 cup ( soak for 30 minutes )

3. Water – 1 1/2 cup

4. Vegetables – Cabbage – Half of medium cabbage ( thinly sliced) , tomatoes – 2 ( chopped) , Green Beans and Chopped carrots – One cup , Green peas

5. Spice Powders  – Red chilli powder , coriander and Cumin powder – 3/4 th to 1 tbsp or Curry Powder – 1 tbsp 

6. Whole Garam Masala – 5 cloves , 3 cardamom , 2 Bay Leaves , Cinnamon stick – Medium , Cumin seeds – 1 tbsp

7 . Oil – 4 to 5 tbsp

8. Finely chopped coriander and Mint leaves

METHOD :

1.Turn Instant pot on a saute mode . When warm add oil followed by Whole Garam Masala and Cumin seeds. Add thinly sliced onions. Fry till light brown. Add Crushed garlic and ginger . Fry for a minute.

2. Then add red chilli powder , coriander and Cumin powder. Mix well. Add sliced cabbage, Chopped tomato , green beans , carrots and Green peas. Mix well .

3. In a bowl mix rice , soaked lentils , water and salt. Taste water for salt .and add accordingly. 4. Add this to Inner pot .

4. Close lid. Rice mode . NPR . SERVE with vegetable raita.

CRACKED WHEAT(DALIYA) WITH CABBAGE PICKLE- INSTANT POT- 5 INGREDIENTS – DINNER /KIDS LUNCH BOX – ONE POT MEAL

Cracked Wheat ( Daliya)   with Cabbage Pickle – Instant pot – 5 main Ingredients – DINNER /KIDS LUNCH BOX 

If you are not in the mood of cooking roti and vegetable for Dinner and want to cook something simple with minimum preparation and few ingredients, Try this One pot meal with Cracked wheat ( Daliya) . No need to soak grains and Lentils , Just transfer everything to the pot . No water left and no burnt bottom .  Enjoy this tasty One pot meal for Lunch /Dinner prepared with few ingredients and minimum preparation. Of course less Cooking time and Zero monitoring. With Simple Cabbage Pickle . I added Red  lentils and good amount of vegetables . No masala powder added . I added simple Sambar powder for little flavor and taste. You can add store bought or Homemade sambar powder and Optional . ( I add sambar powder in all my recipes as it is not spicy for my kids and it is  mild ) . Don’t forget to add Green chillies( I add light green chillies which are zero spicy)  , ginger  and Juice of Lime. Here is the Simple recipe with few and everyday ingredients from your pantry . 

 HOMEMADE CABBAGE PICKLE :

 1. To finely chopped cabbage add Red chilli powder – 1 tbsp , Salt , Roasted cumin powder – 1/2 tbsp , Fenu greek powder and mustard powder – 1/4 th tbsp and chopped coriander .

2. Squeeze Juice of half or full Lime 

 3. Heat 2 tbsp Oil and add Black spit urad dal – 1 tbsp and cumin seeds and Mustard seeds – 1/2 tbsp and Red chillies . Cool and add to the Pickle. If you like you can add crushed garlic to the Oil . 

Recipe for 3 . Preparation time : 10 minutes and Cooking time and NPR: 15 to 20 minutes 

INGREDIENTS :

1. Cracked wheat ( Daliya) – 1 cup ( Medium size )

2. Red lentils – 1/2 cup   . Red Lentils doesn’t need soaking  or Cooked Black channa or Roasted peanuts 

3. Water – 2  cups

4. Vegetables – Onion ( thinly sliced) , Potato – One ( chopped) , Tomato – One ( chopped ) , Frozen green peas – 1/2 cup , Carrots and Green Beans   – One cup 

5. Sambar powder – 1/2 tbsp , Green chillies – 2 ( chopped , Light green are zero spicy ) , Ginger – 3 tbsp ( Chopped) 

6. Oil – 4 tbsp and Ghee – 1 tbsp to add at the end ( Optional) .

7. Salt – accordingly

8. Juice of Lime – one

9. Finely chopped Coriander leaves and Curry leaves 

10 . Roasted Peanuts or Cashews – 1/4 th cup 

11. Black split urad dal – 1 tbsp , Cumin seeds and Mustard seeds – 1/2 tbsp each 

METHOD:

1. Wash Cracked wheat( Daliya) and red lentils 3 to 4 times. Add  water and salt . Taste water for salt and add accordingly .

2. Turn Instant pot to saute mode. When hot add oil . Followed by Black split urad dal , Mustard seeds and cumin seeds .

3. Add finely chopped Onions , green chillies , Ginger and Curry leaves. Fry for couple of minutes .

4. Add chopped tomatoes and Sambar powder  . Add frozen green peas, Chopped carrots and Green Beans.

5. Add Cracked wheat ( daliya) with Red lentils and water . Mix. 

6. Close lid . Rice mode. Unplug when you see Silver button pops up. NPR( 7 to  10 minutes )

7. Open lid. Fluff with fork .

8. Add chopped coriander and Juice of lime. Taste and add accordingly .

                       SERVE with HOMEMADE CABBAGE PICKLE and Plain yogurt

Instant pot Green Lentils Tomato Rice – One Pot meal for Lunch /Dinner – 5 Ingredients . Served with Vegetable Raita( Vegetables in Yogurt . Seasoned with cumin seeds oil) 

 Tasty ONE POT MEAL you feel like eating every day . Easy to prepare and will be ready before you clean up your kitchen counter and prepare Raita . I use Green Lentils in my everyday Cooking. I add in soups, Vegetable Patties and in Rice recipes ( Biryani) . What I like about this Lentil is , it will hold shape after you finish cooking . Doesn’t get mushed up . Soak along with rice for 30 minutes so they cook along with rice . Or you can soak overnight if you are planning to cook early morning. I just added few vegetables. You can add any vegetables of your choice. Mild spices will flavor the rice and taste good when served with Vegetable Raita. I prepare raita night before and refrigerate and it comes to room temperature by Lunch time. Here is the Simple recipe wit few ingredients. I added good amount of Lentils and it is not dominating the grains.

Recipe for 3 . Preparation and cooking time : Less than 20 minutes 

GREEN LENTILS : 

RECIPE FOR VEGETABLE RAITA seasoned with CUMIN SEEDS OIL

             To 2 cups of Yogurt add 1/4th cup chopped onions, One chopped tomato , 3 Baby carrots grated , Chopped coriander and salt. Heat 1/2 tbsp oil and add 1/2 tbsp cumin seeds . Cool and add to Yogurt( curd) . 

.INGREDIENTS :

1. White Basmati rice Or Brown Basmati rice  – 1 cup  and  Water – 1 1/2 cup

2. Green Lentils – 1/2 cup to 3/4 th cup ( first try with 1/2 cup ) 

3. Toamtoes – 2 ( Chopped) ,  Onion – thinly sliced , Garlic cloves – 4 ( Peeled and crushed ) , Ginger – small piece ( Paste in Mortar and Pestle ) and  fresh Green chilli paste – 2 g ( In mortar and Pestol) and Potato .

                    Finely chopped coriander and Mint and Chopped vegetables ( Green Beans and Carrots)  – One cup

NOTE : You can add thinly sliced CABBAGE or BIG florets of CAULIFLOWER or Chopped SPINACH or BELL PEPPERS or MIXED VEGETABLES ( Green Beans , carrots ) 

4. Garam Masala or Sambar powder or Rasam powder – 1/2 to 1 tbsp  and Salt , RED PEPPER FLAKES ( OPTIONAL) – 1/2 tbsp 

5. Whole Garam Masala – 5 cloves , 2 cardamom , small cinnamon stick , 2 Bay leaves and 1/2 tbsp cumin seeds

6. Oil – 4 tbsp 

METHOD : 

1. Soak Basmati rice and Green Lentils for 30 minutes . Wash 3 to 4 times and transfer to a Bowl . Add water and salt . Taste water for salt and add accordingly .

2. Turn Instant pot on saute mode . When warm add Oil . When oil hot add Cloves, cumin seeds , cardamom, Bay leaves and cinnamon stick .

3. Add Onions . When onions turn pink add Green chilli paste, crushed garlic , ginger paste , fry couple of minutes .

4. Add chopped tomatoes. Add chopped vegetables( green beans and carrots)  , rice with water and lentils. Mix well . Add curry powder or Sambar powder .

5. Close lid. Rice mode . NPR ( after  7 to 10 minutes) . Open lid. Mix gently . Discard Bay leaf , Cinnamon stick and cloves. 

                                       SERVE warm with Vegetable Raita

RICE COOKER / PRESSURE COOKER : 

1. Soak rice and Lentils . Wash 3 to 4 times and transfer to Rice cooker. Add 2 cups water and salt . Taste water for salt and add accordingly.

2. Add chopped green beans, carrots , Potato and chopped tomato , Coriander and Mint to rice cooker .

3. Add Garam Masala  or Sambar powder or rasam Powder . Mix well .

4. Heat 4 tbsp oil and add Cumin seeds , Cloves , Cardamom, Bay leaves and Cinnamon stick . Add this to Rice water. Mix well .

5. Close the lid and press Cook button . Unplug when you see warm . Serve with Vegetable raita.

INSTANT POT ZUCCHINI VEGETABLE SAMBAR ( SHORT CUT METHOD) – 5 INGREDIENTS

Zucchini Vegetable Sambar – Instant Pot – 5 main ingredients 

                    with Barley Lentils Pakora/ Instant Chickpeas ( BESAN) rava dosa 

Recipe for 4 . 

I tried one more short cut method of preparing Vegetable sambar in Instant pot without adding soaked Dal. It doesn’t taste raw and cooked perfectly in less time and time saving . Sambar is a simple recipe  prepared with Vegetables , Lentils and Spices and served  with  Breakfast( with Idli , Dosa, Upma ) or as a side for Lunch /Dinner . You can eat with just Steamed rice or with Appetizers like vada( Prepared with Lentils) . Right amount of vegetables with right consistency ( Not too thick and not too thin) . Left over Sambar taste good for next day  If you want to pack for Lunch Box.  I cooked for Dinner to serve with barley Lentils  pakora and stays warm for 3 to 4 hours in IP . You can even serve with Instant Chickpea flour Dosa for Lunch as Kids are at home for Summer Vacation . Here is the Simple recipe prepared with every day Ingredients.

Serve for Breakfast/ lunch / Dinner with Barley Lentil Paniyaram or with Instant Chickpea flour Rava  Dosa .

INGREDIENTS :

1.  VEGETABLES :  Zucchini – 2 ( chopped into big pieces)   or Lauki( green squash ) – Medium size ( Peeled and Chopped into big pieces) , Onion – Medium ( sliced ) , Garlic – 6 cloves ( Peeled and crushed ) , Ginger – Small piece  ,  Potato – 3 to 5  , Tomatoes – 2 chopped and Carrots and finely chopped coriander to add at the end. 

2. Toor Dal – 1/4 th cup( soak ) and  one Tomato to grind with Toor dal 

3. Tamarind  – Marble size  ( No need to soak . Grind along with Toor dal) and Jaggery – 2 tbsp ( Brown sugar) 

4. Water – 2 measuring cups 

5. Oil – 2 tbsp and Ghee – 1 tbsp

6. Sambar powder – 1/2 to 1 tbsp

              ( Dry roast  1 /2 tbsp cumin seeds , 1/2 tbsp coriander seeds, 2 red chillies , 5 Peppercons . Cool and grind with 2 tbsp dry coconut , 2 cloves of garlic and small piece of ginger ) . If you want to store don’t add garlic and ginger .

STOVE TOP METHOD :

     1. Soak Toor dal for 1/2 hour and wash 3 to 4 times before you microwave. Microwave with 1/2 cup water.  Discard the cooked water . Add one measuring cup water to cooked toor dal . Add tamarind , little salt and sambar powder .Grind with One tomato . Add One more measuring cup water. Transfer to a Bowl . 

2. Heat a Sauce Pan or Pressure cooker . When warm add Oil . Splutter Mustard seeds, Cumin seeds, Black Split Urad dal , Red chillies, Hing and Curry Leaves.

3. Add thinly sliced Onions fry till golden brown.  Season with salt and Turmeric . Add  crushed Ginger and Garlic and fry couple minutes. 

4. Add Chopped Lauki or Zucchini , Chopped tomato , Chopped potato , Carrots , Tomato , sambar powder, Tamarind extract with 1/2 cup water , Jaggery and One measuring cup water .

5. Pressure cook for 2 whistles . When Pressure comes down add Ghee and finely chopped Coriander .

METHOD : INSTANT POT 

1. Soak toor dal . Wash and microwave for 2 minutes .  Discard the cooked water . Transfer to a Blender . Add one measuring cup water , tamarind , salt and sambar powder .Grind  One tomato . Add one more measuring cup water. ( total 2 measuring cups water ) . Transfer to a Bowl . Add 2 tbsp Jaggery . Mix well. 

2. Turn Instant pot on Saute mode . When warm add Oil . Splutter Mustard seeds, Cumin seeds, Black Split urad dal, Red chillies , Hing, Crushed Garlic , ginger. Fry for a minute. Add thinly sliced Onions. Season with salt and turmeric. Fry till Onions are brown .

3. Add cubed d Potato ,Carrots and Tomato. Mix well . 

4. Add Toor dal water . Mix . Add chopped Squash and Zucchini. Close the lid . 

5. Manual 4  to 5 minutes. Unplug when silver button pops up. NPR( 10 minutes)  . Open lid and add Ghee and finely chopped Coriander .

                 TASTE for salt and Spices and add accordingly .

Note : You can add Tadka (seasoning)  at the end too with Ghee and Crushed garlic .

BARLEY PANIYARAM :

1. Soak 1 cup Urad dal , 1/2 cup Channa dal , 3/4 th cup Barley and 3/4 th Brown Basmati rice , Fenugreek seeds for 2 hours.

2. Grind with Sufficient water and salt .

3. Ferment overnight in Instant pot or on Kitchen counter or in Oven . ( If you   ferment paniyaram won’t  be dense ) or If you don’t want to ferment add Yogurt to  the batter along with chopped vegetables .

4. To One cup of fermented batter add Chopped Onions, Green chilli paste, Grated carrots, Chopped ginger and finely chopped coriander .

5. Heat Paniyaram pan on medium heat. Grease the cavities with little Oil . When warm pour 2 tbsp batter and cook for 2 minutes on Medium flame.

6. After 2 minutes flip them and cook on 4 sides.

                               SERVE with ZUCCHINI VEGETABLE SAMBAR 

RECIPE for INSTANT CHICKPEA FLOUR( BESAN ) RAVA DOSA : 

STUFFED EGGPLANT CHICKPEAS BIRYANI – INSTANT POT – 5 MAIN INGREDIENTS

Stuffed Eggplant Chickpeas Biryani – Instant pot – 5  Main Ingredients 

If you are like me who doesn’t want to spend much time to prepare Lunch Box  or  Dinner try this One pot meal with Stuffed eggplant and Chickpeas. Instead of cooking separate  curry to pack with grains , I added Stuffed Eggplants ( Stuff with spice powder of your choice or with Garlic Chutney powder) , so they won’t taste bland when  you take a bite. I was worried whether Eggplants ( I added medium thin Eggplants ) will cook with rice. To my surprise they cooked perfectly . I have cooked Chickpeas in refrigerator , so I added to the Biryani ( I always keep cooked Beans in the refrigerator to add to curries, Salads , Rice recipes , Chaat etc) . For spice powder you can add Biryani Masala or Garam Masala or Sambar powder . I sometimes add Sambar  powder , so it won’t be strong for my kids. I cooked in 6 qt and added 15 Eggplants . Next time i will add more as my kids liked to eat with Biryani. You  can try with rice of your choice ( white Basmati  rice or Brown Basmati rice ) . Serve or Pack with Carrot Raita. Perfect combination . Here is the simple recipe with 5 main ingredients.

                  PERFECTLY COOKED RICE and EGGPLANT  WITH NO WATER LEFT AND NO BURNT BOTTOM 

Recipe for 3 to 4 . Preparation and Cooking time : 20 minutes

INGREDIENTS :

1. White or Brown Basmati rice – 1 Cup

2. Water – 1 1/2 cup

3. Chickpeas – One can drained and rinsed 

4. Eggplants – Medium  15 to 20 

5. Tomatoes – 2 ( Chopped)

6. Potatoes – 2 ( Peeled and chopped into small cubes) 

7. Oil – 3 tbsp and Ghee – 2 tbsp

8. Salt to taste

9. Garam Masala or Biryani Masala or Sambar powder – 1 tbsp and Red Chilli powder

              and  Garlic chutney powder or any spice powder of your choice to stuff Eggplants .( In a mortar pestol add red chilli powder , coriander and cumin powder and 2 cloves of garlic and coriander . To stuff the EGGPLANTS) 

10 . Whole Garam Masala  : Cumin seeds – 1 tbsp , Cloves – 5 , Cardamom – 3 , Cinnamon stick – One small , Bay leaves – 2

METHOD :

1. Soak rice. Wash 3 to 4 times. Add water and Salt to rice. Taste water for salt .

2. Wash Eggplants and make a slit and stuff with Spice powder .

3. Turn IP on saute mode . When warm add Oil and Ghee . Add cumin seeds, Cardamom , cloves, Cinnamon stick , Bay leaves.

4. Add Onions and fry for couple minutes.  Add Ginger ,garlic paste  and Green chilli paste . Fry until raw smell goes.

5. Add finely chopped Onions and cook until soft. Add Biryani masala powder , Red chilli powder or Sambar powder. Mix well .

6. Add Stuffed Eggplants , Chopped Potato, Rice with water. Mix gently .

7. Cancel saute. Close with the lid. Rice mode . NPR . Serve with Carrot raita .

RECIPE FOR CARROT RAITA. :

                     Add 1/4 th cup finely chopped onions, One chopped tomato , Grated carrots, Chopped coriander and salt to 2 cups Yogurt ( curd) . Heat 1 tbsp Oil and add 1/2 tbsp cumin seeds. Cool and add to the Raita .

INSTANT POT VEGETARIAN BARLEY SOUP WITH SPECIAL INGREDIENT – 5 INGREDIENTS ( ONE POT MEAL)

Instant Pot Vegetarian Barley soup with Special Ingredient ( 5 Ingredients) – One Pot Meal . No Oil Soup .

 If you like to cook Simple Dinner without stirring and Babysitting , then you are definitely going like this  Barley Soup prepared with special ingredient that changes the taste of the soup. Not to worry Kids won’t eat and drink this Soup  . My Kids thought it’s a new variety  of Pasta . Some times in the middle of week I take a break of not cooking Indian Meal . Instead I prepare  Salad or One Pot Soup for Dinner. It’s so tasty that Kids will come for second’s and don’t forget to add  in Dinner /Weekend Lunch recipes book. ( I just  hung a recipe book to my refrigerator door . Now and then I look into it for  Easy Dinner ideas that I tried and wrote in the book . 5 ingredients ) . After gathering 4 ingredients I was looking for one last Ingredient  which will change the taste of soup . ( Over the weekend my kids go for Grocery shopping  with their Dad and buy their favorite sauces to add to pasta , Soups and Sandwiches )  . I encourage my kids to come into Kitchen when ever I prepare simple soup or salads for Dinner, so it will interest them . They like measuring and transferring to the Pot. When they tasted it they just say wow a tasty soup . Just a Bowl of soup is filling and doesn’t need any side . Here is the Simple soup recipe with 5 Ingredients . 

This is my second Soup recipe with Barley  in INSTANT POT . NO SAUTING . JUST TRANSFER EVERYTHING TO THE POT . NO OIL SOUP . 

RECIPE for 4 . Preparation time : Gathering Ingredients

INGREDIENTS :

1. Barley – 1/4 th cup and Pasta – 1/4 th cup ( Alphabet pasta)

2. Mixed Beans – 1/2 cup Soak Overnight or Cooked or Canned 

3. Salsa – 1/2 Measuring cup ( Special Ingredient) or Pizza sauce 

4. Water – 4 cups

5. Finely chopped vegetables of your choice – 2 Cups , Onion – Medium ( Chopped ) , Tomatoes – Chopped 2 

6. Spices – Curry Powder – 1 tbsp  ( Blend of Red chilli powder , coriander and cumin powder , garlic)  or Sambar powder or Rasam Powder , Freshly ground Black Pepper and Mixed herbs 

7. Salt

8. Crushed ginger and Crushed Garlic 

METHOD : NO SAUTING . JUST TRANSFER EVERYTHING TO THE POT . No Oil Soup

1. Soak Barley and Mixed Beans Overnight . Wash 3 to 4 times. add to the inner pot of Instant pot .

2. Add Water , Salsa , Spices, Salt , Chopped Vegetables , Chopped tomatoes , Chopped Onion , Crushed Garlic , crushed Ginger . Mix well . Taste water for Salt and add accordingly .

3. Close the IP lid. Bean Chilli mode . NPR .

4. Open the lid and add chopped Parsley or Chopped Coriander. SERVE warm or at room temperature. 

PRESSURE COOKER : Just transfer everything to the Pressure cooker and cook on Medium High flame for 3 whistles.
