Chickpeas Pasta Salad with Special Ingredient . Kids Lunch Box/ Weekend Lunch /Dinner  – Instant pot – PIP . 5 Ingredients .Tasty and juicy  salad . 

  5 Ingredients Chickpeas Pasta salad with Special Ingredient . Cooked both Chickpeas and Pasta in Instant Pot ( PIP ) . After long weekend I need to pack for Tuesday’s Lunch Box . Something easy and doesn’t need Cooking in the morning. I just soaked Chickpeas . Thinking what combination will be good . Opened my refrigerator to look for Veggies. I have salad Cucumber , Tomatoes and Dressing ( Took the help of store bought sauce. This is my Special Ingredient ) .With these Ingredients , Pasta will be good combination and some Spices. I cooked the Chickpeas and Pasta in Instant Pot night before. Morning I just added thinly sliced Vegetables ( with the help of food processor) , sauce and Spices. Pasta and chickpeas are perfectly cooked with the amount of water I added . I just tasted before packing Lunch Box . It’s Juicy and tasty with perfectly cooked Pasta and chickpeas. You can’t stop with One or two spoons. Kids favorite Pasta chickpeas salad . Here is the Simple recipe prepared with 5 ingredients.

A healthy adult needs 31 g of fiber each day . Fruits , vegetables, grains and Beans are all natural sources of fiber. The GI index measures how quickly Carbohydrates are released into the body quickly while others are released slowly . Foods with GI value of 55 and under contain slow releasing Carbohydrates and are classed as low GI , Medium GI foods are valued between 56 n 69 while high GI foods have a value of 70 or above . The Carbohydrates with Low GI foods is released into the body slowly . This helps to keep your blood sugar levels stable and you will feel fuller longer between meals . Chickpeas are healthy way to add more protein and other essentials nutrients to your meals . Beans may also lower your risk for cancer , heart disease and diabetes as well as limiting increases in blood sugar levels after meals . Cucumber 🥒- One Cucumber-45 Calories ( store in a Box with lined paper towel and stays good for more than a week ) . Cucumber with peel is a good source of dietary fiber that helps reduce costipation and offers some protection against colon cancer .Tomato – One medium size tomato 🍅 ( 95 percent) water -32 Calories . Super food for Diabetics. Packed with Vitamin C . Low in carb and Low in calories. Source -HM

Recipe for  2 to 3. PIP cooking 3 qt 

Preparation night before : 10 minutes  .  Morning : Less than 15 minutes 

Note : You can cook Pasta and chickpeas in Pressure cooker in SEPARATE CONTAINERS .


1. Chickpeas – 1/2 measuring cup ( raw) – Soak overnight 

2. Whole grain or Whole wheat  Pasta – 1./2 cup

3. Water to cook Chickpeas – 1 1/2 cup ,  Water to cook Pasta – 2 measuring  cups

4. VEGETABLES :  Sliced Salad cucumber – 1 ( I used food processor ) , Sliced tomato – 1 ( food processor ) or Finely chopped 

5. Salsa – 1/2 cup ( Special ingredient)  I used store bought SALSA 

                   Mix chopped onion , chopped tomato 🍅, Bellpepper with little Salt , Black pepper , Mixed peppers and Lime juice . Leave overnight in the refrigerator or you can use instantly

                                or Store bought Salsa .

6 . Salt , Black pepper , Rasam powder – 1/2 tbsp ( Adds flavor and not spicy for Kids) , MixedI Italian  herbs. and Finely chopped Parsely or Coriander 


1. Pour 1 1/2 measuring cup water in inner pot with washed Chickpeas. Season with salt .

2. Wash Pasta . Transfer to steel Bowl . Add water and season with salt. Place Trivet and Pasta Bowl .

4. Close the IP lid. Manual 10 minutes .  Unplug it when you see LOW . NPR . Open the IP  lid . Discard water from cooked Chickpeas and Pasta. Cool before adding other ingredients .

5. Add thinly sliced Cucumber , Tomato , Salt , Salsa , Black pepper , Mixed herbs and chopped Parsely or coriander. Taste for salt and spices and add accordingly .

               PACK for KIDS LUNCH BOX or for WEEKEND LUNCH or DINNER 



10 Minutes Vegetable Pasta . Cooked in Layers  – Dinner/Kids Lunch Box – Instant Pot – 5 Main Ingredients 

  I cooked in LAYERS . Perfectly cooked PASTA and NON MUSHY VEGETABLES  with a touch of Spices . No water left and no burnt bottom .

                     I have Zucchini and Asparagus that I need to finish before Weekend . Perfect match for these vegetables are Pasta and Spaghetti . So I tried with  whole grain Spiral Pasta .  This is my first dry version recipe of Pasta in Instant Pot. Less time  to cook and 5 minutes to gather and chop Vegetables .  Whenever I try new recipe in Instant Pot I stay in the kitchen till I unplug it . Don’t want to see burnt sign .Pasta cooked perfectly with the sauce and water I added . No burnt bottom. This is the third Pasta recipe I tried in INSTANT POT  . My kids bring empty Lunch Box when ever I pack Pasta in their  Lunch Box. Easy for me to Cook in the morning as it is so cold and I  don’t feel like spending  time to prepare Lunch Box.You can even try for Dinner when ever you don’t like cooking Indian Meal .  I added good amount of vegetables. Adding Cheese is Optional . It taste good with and without cheese. Here is the Simple recipe for 3 with Papad Chaat :

Recipe for 2 . Preparation and Cooking time – Less than 10 minutes 


1. Spiral colorful Pasta ( Whole wheat or whole grain ) Or Whole grain Penne Pasta  – 6 Handfuls or One Measuring cup 

2. Water – Half cup ,. Tomato sauce or Marinara sauce or Salsa – 1/2 cup   or One cup WATER if you don’t have tomato sauce , Tomato Ketchup – 1/4 th cup 

3. Indian Spices ( I add Rasam powder so it won’t be spicy for my Kids ) – 1/2  to 1 tbsp tbsp , Black Pepper , Mixed Herbs ( add at the end) , Parsely , Basil ,Oregano and Red pepper flakes 

4. Cheese – Mozzarelle and Cream cheese – 2 tbsp  to add at the end 

5.  VEGETABLES : Zucchini – 2 ( chunky) So they will hold shape and won’t be mushy . Asparagus , Shallots- 3 ( thinly sliced)  and Crushed Garlic -4 ,   Roma Tomatoes – 3 ( Chop into 18 pieces) so they hold shape and won’t be mushy and Bell peppers .

6 . Oil – 1 tbsp 

7. Spinach – 2 big handfuls ( to add at the end . Finely chopped) 


1. Turn IP on Saute mode . When warm add Oil, Red pepper flakes  and crushed Garlic . Fry for a minute . Add thinly sliced shallots . Fry for couple of minutes  .

2. Add Water and tomato sauce or JUST WATER. Add washed Pasta , Rasam powder ( or Red chilli powder , Cumin and Coriander powder)  and Ketchup . Mix well .

2. Add chopped Bel peppers , Zucchini , Asparagus, chopped tomato  on TOP OF  PASTA . DON’T MIX . 

4. Cancel Saute . Manual 5  minutes . NPR ( after 5 minutes)  .  

 5. Add  Mixed Herbs( 1 tbsp)  Mix . Taste for salt and Spices and add accordingly .

                            ADD  Mozzarella Cheese, Cream Cheese and Finely chopped Spinach  . 


1. Heat Pressure cooker on medium heat . When warm add Oil , garlic , red pepper flakes followed by shallots. Fry for a minute.

2. Add  salt , Tomato sauce , water , Sambar powder , Washed pasta . Mix well .

3. Layer vegetables. Bell pepper , Asparagus , Zucchini and Tomato. Don’t mix.

4. Close lid and cook for 2 whistles.

5. Release pressure naturally .

6. Add Ketchup , Mixed herbs ,  Mozzarella Cheese, Cream cheese and finely chopped spinach  . Mix gently .

                  TASTE for salt and spices and add accordingly.

              Cool and Pack for Lunch Box.



Pasta in Spinach Nuts sauce and without cheese – Instant Pot 

I tried this recipe on stove top few months back and the same thing I tried in Instant Pot for Yesterday’s Lunch without Cheese , so I can pack for Kids Lunch Box( They like Pasta at least twice a week in Lunch Box and easy for me to Cook in the morning rush hour) ) . It turned out good without burnt bottom. When ever we cook in IP we have to make sure to add sufficient water so it won’t burnt and at the same time sauce  cooks perfectly and don’t smell raw  . Kids like Pasta with Sauce and I’m hiding all bland vegetables which they don’t like to eat ( Now they got used to eating everything ) and they can’t pick and keep aside because the Vegetables gets blended in the Sauce . Spice up the sauce with little Sambar powder or Rasam Powder so it won’t overpower the sauce and taste good with little Black pepper and Mixed Italian herbs. Check my recipe how much water and milk to add . You can soak the nuts for an hour ( Because of Health reasons) or you can grind roasted nuts directly with Milk and water . I added good amount of Spinach and don’t forget to add some deseeded tomato at the end for color and taste. Here is the Simple recipe with few Ingredients. 

Recipe for 3 


1. Whole grain Pasta – 1 cup( Measuring cup)

2. Water – 1 1/2 cup ( to cook Pasta – PIP)

3. Milk – 8 Ounces and Water – 8 Ounces ( To cook the sauce)

4. Spinach –  3 Big handfuls ( Finely Chopped) ,  Roma tomatoes – 2 ( Deseeded and Chopped)

5. Spices – Rasam or Sambar powder ( 1/2 tbsp ) , Black pepper and Italian Mix herbs – 1/2 tbsp

7. Oil – 2 tbsp

8. Cashews and Almonds – 10 each

9. Flour of your choice – 2 tbsp to thicken the sauce

10. Salt 


 1. Wash Pasta 3 to 4 times and transfer to a Steel Bowl and add Water .( We are cooking Pasta along with Sauce . PIP method)

2. Chop Spinach , Tomatoes and gather all Ingredients.

3. Grind Almonds and Cashews into fine powder and add Milk and grind One more time . Add Water .

4. Turn IP on Saute mode . When warm add Oil followed by Flour . Fry for a minute . Add Nuts milk slowly and mix without Lumps. Add all the liquid . Keep  Pasta Bowl along with Sauce  .

5 . Cancel Saute button. Press Manual for 4 Minutes .  Unplug when you see Low .  NPR ( after 5 minutes ) .O pen the lid. 

6.  Take out the Pasta Bowl .

7. Add Rasam powder and Salt  . Taste the sauce . If needed add Salt and Spices .

8 Add Pasta , Chopped Spinach . Cover with lid and Cook for 2 minutes ( saute mode). 

9. If needed add Pasta water to the Sauce .

10 . Add chopped tomatoes , Black pepper and Italian Mixed Herbs.

                          Cover for 5 minutes before you Serve . So the tomatoes and Spinach will cook for some more time. Serve warm. 


Spaghetti with Cherry Tomato sauce – Instant Pot –  5 INGREDIENTS -Kids Lunch Box 

Easy and fast Lunch Box idea for Busy mornings. Bonus – If you have older kids they can prepare their Lunch Box. Easy to prepare One pot meal in IP . Nothing fancy about this recipe but taste delicious in LUNCH Box with all the ingredients I added .  I’m encouraging my daughter ( She is good at Baking) to learn Basic Cooking. So she can prepare her Lunch Box when I’m not around. It will be moist with the extra sauce that can be absorbed by spaghetti by Lunch time.Don’t miss any ingredient to enjoy this tasty pasta.  Spices and Marinara sauce not only adds flavor but taste good too . Spinach for extra nutrition and easy way to make kids eat greens is to hide in their favorite sauce. Mozzarella for little cheesy taste. Here is the Simple recipe. 

Pack for KIDS LUNCH BOX : One pot meal .

Recipe for 2 . Preparation and Cooking time : 10 minutes


1. Sphagetti – 4 Handfuls

2. Cherry Tomatoes – 25 and Shallots – 4 ( thinly sliced) , Crushed garlic cloves – 6 , Ginger – Chopped ( 1 tbsp )  and Chopped Spinach – 3 handfuls 

3. Oil – 1 tbsp

4. Marinara Sauce – 4 tbsp or 1/4 th Cup or Tomato sauce or Pizza sauce 

5. Water – 2 Measuring cups 

6 . Mozarella cheese

7. Black pepper and Mixed herbs – 1 /2 tbsp each , Sambar powder – 1/2 tbsp , Red pepper flakes 


1.Turn IP on saute mode . Add Oil . When warm enough add Crushed Garlic , Red pepper flakes and Shallots.

2. When shallots turn light Brown add Cherry tomatoes. Season with Salt and 1/2 tbsp Sambar powder . Mix well .

3. Add Broken Spaghetti and Water.  Close the lid. Cancel Saute mode . Vent closed . 

4. Manual 5 minutes . Unplug when you see Low .  NPR ( 5 minutes)

5. Add Chopped spinach , Black pepper, Mixed herbs, Pizza sauce  and Mozarella cheese. Mix well . Taste for Salt and Spices and add accordingly .
