Wheat Berry is an entire kernel composed of bran, germ and endosperm . All wheat products such as wheat flour are made from wheat berries . Wheat berries are chewy in texture , sweet and nutty in taste . It holds shape even after cooking. For fast cooking soak wheat berries overnight . Once cooked you can refrigerate and add to your salads and soups. Dried Wheat berries can last for months if stored in an air tight container and in freezer . Wheat berries are full of fiber , vitamins and nutrients such as calcium , Iron, Vitamin B , folate and potassium . If you want to stay strong and healthy and want to get more nutrition choose organic . Organic food helps to increase the nutrient intake .
In today’s recipe I soaked Wheat Berries overnight and I cooked in INSTANT POT along with Black eyed Beans. I prepare this Salad 2 ways with Vegetables and Simple dressing and Fruits with fruit dressing . If you are preparing Salad with fruits you don’t need to add Salt as Wheat Berries and Blackeyed Beans are cooked with little Salt and you won’t miss salt because of fruits and fruit dressing. For vegetable salad I added chopped Pickled vegetables. You can add pickled Green peppers too for a spicy bite in between. Here are the 2 variations .
They are chewy and keeps you full . You won’t crave for anything till your next meal.
WHEAT BERRY SALAD with FRUIT DRESSING. Recipe for 2
1. Wheat Berries – 1/4 th cup ( soak overnight)
2. Black eyed Beans – 1/2 cup ( Soak overnight)
3. Fruits – Chopped Grapes, Orange , Cantaloupe , Water melon and Chopped Apples
4. Fruit Dressing : Mash grapes and add Orange juice , Black pepper , Honey and mixed herbs.
5. Finely chopped fresh coriander or Parsely and Mint .
1. Add washed Wheat Berries to the inner pot. Season with salt . Add water .
2. Place trivet and Black eyed bean bowl . Season with salt and add water .
3. Close the lid.
4. Manual 15 minutes ( for more soft texture . Count down 15 minutes) .
5. NPR . Cool Wheat Berries and Black eyed Beans . Add chopped fruits and fruit dressing.
WHEAT BERRY SALAD with Vegetables and Pickled Cucumbers :
Mix Wheat Berries with Cooked Black eyed Beans , Chopped Salad cucumber , Chopped Pickled Vegetables , Chopped cabbage , grated carrots, Chopped Tomato , Chopped shallots ,Salt , Freshly ground Black pepper , Mixed herbsand Lime juice . Add finely chopped coriander or Parsely and chopped Mint .
